- 2 teaspoons olive oil
- 9 T butter, diced (at room temperature)
- 3/4 cup onion, finely chopped
- 1 garlic clove, crushed
- 1 1/4 lb wild mushrooms, chopped (such as chantarelle, oyster and ****ake)
- 2 fl oz white wine
- 4 cups vegetable stock or water
- 5 fl oz (1/4 pint) cream
- salt and freshly ground black pepper

- 1/2 of a red onion
- 1 teaspoon chopped garlic
- 1/2 of a sweet red bell pepper
- 1/2 of a sweet green bell pepper
- 1/2 of a chopped zucchini

- Nutmeg to taste
- Cinnamon to taste
- 1/2 cup olive oil
- 1/4 cup raisins
- 1/4 cup chickpeas (garbanzo beans)

- 1 cup orange juice
- 1 cup sugar
- 1/2 cup salt
- 1/4 cup cracked black pepper
- 2 tbsp. basil
- 2 tbsp. oregano
