Creamy Chicken Enchiladas

1) Heat oven to 350. Spray 13x9 glass baking dish with cooking spray
- 1 Tbsp olive oil
- 1/2 cup chopped onion (1 medium)
- 2 tsp finely chopped garlic
- 2 cups reduced-sodium chicken broth
- 3 Tbsp all-purpose flour
- 1/2 tsp ground corriander or cumin
- 1/8 tsp pepper
- 1/2 cup reduced-fat sour cream
- 2 cups shredded reduced-fat Mexican cheese blend (4 oz)
- 1 cup Green Giant Niblets frozen corn, thawed
- 1 can (4.5 oz) chopped green chiles
- 1/4 cup chopped fresh cilantro
- 8 tortillas (6 or 7 inch)
- 1 medium tomato, chopped (3/4 cup)
- 4 medium green onions, sliced (1/4 cup)
- Salsa, if desired
Mexican Seasoning Mix

1) Mix all ingredients in storage container with tight-fitting lid
- 1/4 cup ground dried chilies or chili powder
- 3 Tbsp dried oregano leaves
- 1 Tbsp ground cumin
- 2 tsp ground coriander
- 1/2 tsp salt
Sweet Potato & Chorizo Soup

1) Add the broth to a saucepan and heat until boiling
- 2 carrots, peeled & sliced
- 2 celery stalks, sliced
- 2 medium onions, peeled & chopped
- 2 cloves garlic, peeled & sliced
- 1 3/4 lb sweet potatoes, peeled & chopped
- 7 oz chorizo sausage, sliced
- small bunch of fresh parsley, finely chopped
- 1 3/4 quarts chicken broth
- olive oil
- 1 tsp (heaping) curry powder
- sea salt & pepper
- 1 fresh red chile, finely chopped
Cranberry Apple Cider Cocktail

Fill glass and cocktail shaker with ice
- 2 ounces cranberry juice
- 1 ounce fresh squeezed orange juice, strained
- 1 ounce vodka
- 1 bottle hard cider, chilled (I used Angry Orchard Apple Ginger)

Grilled Margherita Pizza

1) Heat grill. 2) In small bowl, mix garlic, oil, & oregano
- 2 cloves garlic, finely chopped
- 1 tsp olive oil
- 1 tsp dried oregano leaves
- 1 pkg (14 oz) prebaked original Italian pizza crust (12-inch)
- 2 plum (Roma) tomatoes, thinly sliced
- 2 Tbsp coarsely chopped fresh basil leaves
- 1 cup shredded reduced-fat Italian cheese blend (4 oz)
Sparkling Strawberry-Lemondade Slush

1) In blender, place lemondade concentrate & raspberries
- 1 can (12 oz) lemondade concentrate, thawed
- 1 bag (10 oz) frozen strawberries, thawed
- 1 cup water
- 5 cups ginger ale, club soda or lemon-lime carbonated beverage

- 1 Tbsp ground cumin
- 1/2 tsp salt
- Dash pepper
- 1 can (7 oz) whole kernel corn, drained
- 1/4 cup chopped walnuts
- 1 small onion, chopped (1/4 cup)
- Tortilla chips or assorted vegetables for dipping
Sesame Green Beans

1) In 2-qt saucepan, heat 1 inch water to boiling
- 1 lb fresh green beans
- 2 tsp sesame seed
- 1 Tbsp rice vinegar
- 1 Tbsp reduced-sodium soy sauce
- 1 tsp sugar
- 1/2 tsp crushed red pepper flakes
BLT Potato Salad

1) In 2-qt saucepan, place potatoes
- 4 small new red potatoes (about 12 oz), cut into 1/2" cubes
- 1/4 cup fat-free mayo or salad dressing
- 1 tsp Dijon mustard
- 2 tsp chopped fresh or 1/2 tsp dried dill weed
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/2 cup grape tomatoes or halved cherry tomatoes
- 1 1/2 cups bite-size pieces romaine lettuce
- 2 slices bacon, cooked, crumbled
Pork Lo Mein

- 1/2 pkg (9 oz) refrigerated linguine, cut into 2" pieces
- 1/3 cup chicken broth
- 1 Tbsp soy sauce
- 2 tsp cornstarch
- 1 tsp sugar
- 2 tsp gingerroot, finely chopped
- 2-4 cloves garlic, finely chopped
- 2 tsp canola oil
- 1/2 cup thinly sliced red onion
- Toasted sesame seeds, if desired
