Slow Cooker Chicken-Barley Stew

In 4-5qt slow cooker, place carrots, celery, & onions
- 3 large carrots, sliced (2 cups)
- 2 medium stalks celery, sliced (1 cup)
- 1 large onion, chopped (1 cup)
- 2 bone-in chicken breasts (about 1 1/4 lb), skin removed
- 5 cups water
- 3/4 cup uncooked medium pearled barley
- 2 tsp chicken bouillon granules
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 can (14.5oz) diced tomatoes, undrained
- 2 Tbsp chopped fresh parsley
- 1 tsp dried thyme leaves
Slow Cooker Hearty Pork Stew

In 4-5qt slow cooker, mix all ingredients except flour & butter
- 1 1/2 lb boneless pork loin, trimmed of fat, cut into 1" cubes
- 3 medium carrots, cut into 1/4" slices (1 1/2 cups)
- 1 medium onion, chopped (1/2 cup)
- 2 cups 1/2" cubes peeled parsnips
- 1 1/2 cups 1" cubes peeled butternut squash
- 4 cups chicken broth
- 1 Tbsp chopped fresh or 1 tsp dried sage leaves
- 2 tsp chopped fresh or 3/4 tsp dried thyme leaves
- 1/2 tsp pepper
- 2 Tbsp all-purpose flour
- 2 Tbsp butter, softened
Mushroom & Spinach Fettuccine

Cook & drain pasta as directed
- 8oz uncooked fettuccine
- 3/4 cup roasted garlic-seasoned chicken broth (from 14oz can)
- 2 pkgs (6oz each) fresh baby button mushrooms, cut in half
- 6 cups loosely packed fresh spinach, chopped
- 1 cup cherry tomatoes, cut in half
- 1 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 cup evaporated fat-free milk
- 1/4-1/2 cup finely shredded Parmesan cheese
Slow Cooker Mediterranean Minestrone Casserole

In 3-4qt slow cooker, mix all ingredients except green beans, macaroni and cheese
- 3 medium carrots, sliced (1 1/2 cups)
- 1 medium onion, chopped (1/2 cup)
- 1 cup water
- 2 tsp sugar
- 1 1/2 tsp Italian Seasoning
- 1/4 tsp pepper
- 1 can (28oz) diced tomatoes, drained
- 1 can (15oz) garbanzo beans, drained & rinsed
- 1 can (6oz) tomato paste
- 2 cloves garlic, finely chopped
- 1 1/2 cups frozen cut green beans, thawed
- 1 cup uncooked elbow macaroni
- 1/2 cup shredded Parmesan cheese
Farmers Market Barley Risotto

In 4qt dutch oven, heat oil over medium heat
- 1 Tbsp olive oil
- 1 medium onion, chopped (1/2 cup)
- 1 medium bell pepper, chopped (1 cup)
- 2 cups chopped fresh mushrooms (4 oz)
- 1 cup frozen whole kernel corn
- 1 cup uncooked medium pearled barley
- 1/4 cup dry white wine or chicken broth
- 2 cups vegetable or chicken stock
- 3 cups water
- 1 1/2 cups grape tomatoes, cut in half
- 2/3 cups shredded Parmesan
- 3 Tbsp chopped fresh or 1 tsp dried basil leaves
- 1/2 tsp pepper
Roasted New Potatoes with Oregano

Heat oven to 400. Line 15x10 pan with foil
- 10-12 small red potatoes (1 1/2 lbs), cut in half.
- 1 Tbsp chopped fresh or 1 tsp dried oregano leaves
- 2 tsp olive oil
- 1/4 tsp salt
- 1/4 pepper
Broccoli, Feta & Tomato Salad

In 2qt saucepan, heat water to boiling over high heat
- 4 cups water
- 2 cups fresh broccoli florets
- 2 small Roma tomatoes, chopped (2/3 cup)
- 1/4 cup feta cheese
- 2 Tbsp balsamic vinaigrette
- 2 tsp chopped fresh or 1 tsp dried oregano
Broccolini & Ricotta Pasta

Put large pot of water over high heat for pasta
- 1 lb rigatoni
- 2 bundles broccolini florets, chopped (3 cups)
- 1 cup water
- 2 Tbsp EVOO
- 1 lb boneless, skinless chicken breasts, diced
- 4 cloves garlic, minced
- 2 cups (1 lb) part-skim ricotta cheese
- 6-8 sprigs fresh thyme, leaves stripped from stem & chopped
- Nutmeg, couple pinches
- Salt/pepper to taste
Veggie Lo Mein

Put large pot of water over high heat for the pasta
- 1.2-3/4 lb thin spaghetti
- 2 Tbsp vegetable oil
- 2 cups fresh snow peas (4 handfulls)
- 1 small red bell pepper, seeded & cut into thin matchsticks
- 4 scallions, thinly sliced on an angle
- 1 cup fresh bean sprouts (couple handfuls)
- 1" peeled gingerroot, grated or minced
- 3-4 garlic cloves, minced
- 1/2 cup aged tamari (dark soy sauce)
- 2 Tbsp toasted sesame oil
- Salt to taste
Lemon Rice Pilaf

Heat medium saucepan over medium heat
- 1 Tbsp EVOO
- 1 Tbsp butter
- 1 large shallot, finely chopped
- 1 1/2 cups long grain rice
- 1/2 cup dry white wine
- Few sprigs fresh thyme, leaves stripped and chopped
- 1 can (14oz) or 2 cups chicken broth
- 1 cup water
- Grated zest of 1 lemon
- Handful of chopped parsley
- Slivered almonds, toasted, for garnish
