Raspberry Bars

- 2 cups bisquick mix
- 1 cup quick cooking oats
- 3/4 cup packed brown sugar
- 1/2 cup softened butter or margarine
- 1 cup raspberry preserves
Hamburger Meat Loaf

1) Preheat oven to 350. 2) Mix all ingredients together in large bowl
- 2 lbs ground beef
- 1 cup evaporated skim milk
- 1 Tbsp Worcestershire Sauce
- 1 1/2 Tbps onion, grated or finely chopped
- 1/2 tsp dry mustard
- 1/4 tsp sage
- 1/4 tsp garlic salt
- salt & pepper to taste
Slow Cooker Pasta Fagioli

In your slow cooker, layer in the diced tomatoes, beans, tomato paste, italian seasoning, and stock
- 1 (14 oz) can diced tomatoes
- 1 (15 oz) can of Cannellini or Great Northern Beans, rinsed and drained
- 1 (15 oz) can of kidney beans, rinsed and drained
- 1 (6 oz) can of tomato paste
- 2 tablespoons Italian seasoning
- 2 cups chicken stock
- 1/2 pound of pasta (I used shells), cooked
- 1 cup grated Parmesan cheese
- salt and pepper
Seared Chicken & Blistered Cherry Tomatoes with Garlic Mashed Potatoes

1. Heat medium pot of salted water to boil on high
- 4 boneless, skinless chicken breasts
- 6 oz cherry tomatoes
- 2 garlic cloves, smashed to flatten
- 1 1/2 lbs Yukon Gold potatoes, large diced
- 1/2 lb green beans, stems cut off
- 1 bunch basil, leaves picked from stems
- 4 Tbsp butter
- 2 Tbsp Quark cheese
- 3 Tbsp all-purpose flour
- 2 Tbsp red wine vinegar
Mushroom Risotto

1. In a large pot, bring stock up to low simmer (not boiling, just a simmer
- 1 cup Arborio rice
- 2 quarts stock
- 3 cups mushrooms, sliced
- 1 shallot, chopped (or an onion)
- 3 cloves garlic, chopped
- 1/2 cup Parmesan cheese, grated, (plus a bit more to garnish)
- Chopped sage (optional), to garnish
- Extra Virgin Olive Oil (EVOO)
- Salt and Pepper
Whipped Maple Sweet Potatoes

1) Heat oven to 350. 2) Pierce sweet potatoes with fork
- 3 lb garnet sweet potatoes
- 2 Tbsp maple-flavored syrup
- 2 Tbsp butter or margarine, softened
- 1/2 tsp salt
- Ground cinnamon
- Additional maple-flavored syrup, if desired
Chicken Parmesan with Summer Squash

1. Preheat oven to 450. Pat chicken dry with paper towels; season with salt & pepper
- 1 1/2 lbs chicken tenders
- 2 cloves garlic, small diced and smashed into a paste
- 2 summer squash, halved lengthwise, cut into 1" thick pieces
- 1 can (8oz) tomato sauce
- 1 red onion, small diced
- 1/2 lb fresh mozzarella cheese, torn into bite-sized pieces
- 1 bunch basil, leaves picked from stems
- 2/3 cup breadcrumbs
- 1/3 cup grated Parmesan cheese
Slow Cooker Lasagna Soup

1. Brown your turkey and onions on the stove top
- 1 lb ground turkey (or ground beef)
- 1 cup of vegetable broth
- 2 cloves of garlic, minced
- 1 Tablespoon dried parsley
- 1 Tablespoon dried basil
- 1/2 cup chopped onion
- 1 , 28 oz can of diced tomatoes
- 1 , 6 oz can of tomato paste
- 2 small cans of tomato soup
- 2 cups uncooked bow tie pasta
- 1 can of kidney beans (optional)
- Salt and Pepper to Taste
- Optional topping- shredded cheese
Bucatini Pasta with Marinated Squash and Fresh Mozzarella

1. Heat large pot of salted water to boiling on high
- 3/4 lb Bucatini pasta
- 1/2 lb fresh mozzarella cheese, medium diced
- 2 cloves garlic, roughly chopped
- 2 summer squash, halved lengthwise, thinly sliced crosswise, in large bowl
- 1/2 lb heritage globe tomatoes (or cherry), medium diced in bowl with salt.
- 1 bunch basil, leaves picked from stems
- 1 bunch oregano, leaves picked from stems
- 2 Tbsp butter
- 2 Tbsp tomato paste
- 2 Tbsp red wine vinegar
- 1 oz Castelvetrano olives (smashed, pits removed, roughly chopped)
- 1/3 cup grated parmesan cheese
Apple Walnut & Bleu Cheese Salad

- 4 oz arugula
- 1 apple, cut into matchstick pieces
- 1 lemon, quartered and de-seeded
- 1 Tbsp fresh chives, diced
- 3 Tbsp walnuts
- 1/2 cup crumbled bleu cheese
