Sweet Pepper Chicken with Ditali Pasta & Spinach

1. Heat large pot of salted water to boiling on high
- 4 boneless, skinless chicken breasts
- 1/2 lb Ditali pasta
- 2 cloves garlic, roughly chopped
- 1 bunch oregano (pick leaves from one sprig, leave others whole)
- 6 oz sweet peppers, thinly sliced
- 4 oz spinach
- 2 Tbsp butter
- 2 Tbsp marscapone cheese
- 2 Tbs Verjus Blanc
- 1 oz sweet piquante peppers, roughly chopped
- 1/4 cup all-purpose flour
- 1/4 cup grated pecorino cheese

Place potatoes in saucepan and cover with water
- 3 pounds potatoes, peeled and quartered
- 4 ounces fat-free cream cheese, cubed
- 1/2 cup reduced-fat sour cream
- 1/2 cup skim milk
- 3/4 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon white pepper
- 1 tablespoon minced chives

- 2 cups chicken broth
- 1 packet dry Italian salad dressing (right there next to the dry Ranch dressing and stuff)
- 3 tablespoons cornstarch
- 3 tablespoons cold water
- 1 pound angel hair pasta cooked and drained

1. Preheat a griddle to medium heat
- 1 1/4 cups all-purpose flour
- 2 tablespoons light brown sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 1 cup milk (whole or 2%)

1) Heat oven to 350. 2) Spray bottoms only of two 9x5 pans with cooking spray
- 2 cups all-purpose flour
- 1 1/2 cups whole wheat flour
- 2 cups sugar
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- 1 tsp ground nutmeg
- 1 tsp ground allspice
- 1/2 tsp ground cloves
- 1 can (15 oz) pumpkin (not pumpkin pie mix)

1. In a bowl that will fit in your crockpot, add all of your ingredients and stir
- 1 cup Coach's Oats or steel cut oats
- 1 cup pumpkin puree (not pie filling)

- 2 tsp. vanilla extract
- 1/2 tsp. pumpkin pie spice
- 1/2 tsp. cinnamon, ground
- 1 tsp stevia (to taste), optional

1. Heat oil and butter in 4-qt Dutch oven over medium-high heat until butter is melted
- 2 Tbsp olive oil
- 2 Tbsp butter or margarine
- 2 medium carrots, finely chopped (1 cup)
- 1 medium onion, chopped (1/2 cup)
- 1/2 lb bulk Italian sausage
- 1/2 lb lean ground beef
- 3 cans (28 oz each) Italian-style pear-shaped (plum) tomatoes, drained & chopped
- 1/2 cup dry red wine or beef broth
- 1 tsp salt
- 1 tsp dried oregano leaves
- 1/2 tsp pepper
