Lauren's Zesty Chili

1) Combine all ingredients in a crock pot
- 1 pkg pork tenderloin
- 2 cans diced tomatoes (chili ready)
- 3 cans beans (your choice: red, dark, light, black; drain 2 of them, leave 1 undrained)
- 1 small onion, chopped
- 1 small can green chilies, diced
- 1/4 cup diced bell pepper (red or green)
- 1 Tbsp diced chives
- 2 cloves garlic, pressed
- 2 Tbsp chili powder
- 1/4 tsp all spice ground
- 1/8 tsp ground cloves
- 1 tsp cayenne red pepper ground
Cocchiarella Family Pasta Sauce Recipe

1. Brown meat in pan with olive oil and 2-3 sliced garlic cloves over medium heat to lock in juices
- Package of 24 Johnsonville Medium/Hot Italian Sausage
- 2-3 Tbsp olive oil
- 9 cloves garlic diced (3 for browning meat, 6 for sauce)
- 2 cups onion, diced(2 small or 1 medium-large)
- 1 heaping Tbsp salt
- 1 1/2 Tbsp pepper
- 3 Tbsp fresh oregano (or 1/2 tsp dried)
- 5-6 Tbsp fresh basil (2 pkgs)
- 5 handfuls brown sugar
- 1/4 heaping tsp red cayenne pepper
- 16 oz button mushrooms, sliced
- 3 cans (28oz each) canned crushed tomatoes, entire can
- 1 can (28oz each) canned whole peeled tomatoes, entire can
- 5 cans (12oz each) tomato paste
Penne with Spicy Sauce

1) In 12" skillet, over medium-high heat, add 1 Tbsp olive oil & Italian sausage
- 1 pkg (16 oz) penne rigate pasta
- 1 can (28 oz) Italian-style pear-shaped (plum) tomatoes, undrained
- 2 Tbsp olive oil
- 2 cloves garlic, finely chopped
- 1 tsp crushed red pepper (heaping)
- 2 Tbsp chopped fresh parsley
- 1 Tbsp tomato paste
- 1/2 cup freshly grated or shredded Parmesan cheese
- 3/4 lb bulk Italian sausage, browned & crumbled (optional)
Chicken Breasts with Balsamic Vinegar & Garlic

1. Season the chicken with salt and pepper
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 3/4 lb. fresh mushrooms, cleaned & sliced
- 3 Tbsp. all-purpose flour
- 3 Tbsp. Primaiolo EVOO
- 6 cloves garlic
- 1/4 c. Aged Balsamic Vinegar
- 3/4 c. chicken broth
- 1 bay leaf
- 1/4 tsp. dried thyme

1. Using your Instant Pot, or other electronic pressure cooker, heat 1 tbs avocado oil and saute the onions and gar...
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 1 large onion, chopped
- 6 cloves garlic, minced
- 1-2 tbs avocado oil (or other oil with a high smoke point)
- 2 pound boneless beef chuck roast, trimmed of excess fat and silverskin, cut into 4 large pieces
- Salt & pepper to taste
- 1 tsp dried oregano
- 1 jar Pasta Sauce (roasted garlic flavor)
- 1/2 cup water
- 1 cup dry red wine (or beef broth if desired)
- 2 Tbsp flour
- 1 pound rigatoni pasta, cooked
Crowd Pleaser Salad

The night before, mix all dressing ingredients
- Dressing:
- 2 bags of lettuce (suggest 1 romaine and 1 spring mix)
- 1/2 of a red onion, sliced thin
- 6 oz dried cranberries
- 1 can cashews
- 1 1/2 red delicious apples, cut up
- 2/3 cup vegetable oil
- 1 cup sugar
- 3/4 cup red wine vinegar (or any vinegar will work)
- 1 3/4 tsp salt
- 1 1/2 Tbsp poppy seed
One-Skillet Chicken with Spinach & Mushrooms

1. Season chicken with salt & pepper
- 4 skinless, boneless chicken breast halves, cut into 1" pieces
- salt & pepper
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes, drained
- 1 bag (5 oz) baby spinach
- 2 cups mushrooms, thinly sliced
- 1/2 cup parmesan cheese, grated

1) Cook beef & onion in 10-inch skilled over meduim heat, stirring occasionally until beef is brown
- 1 lb ground beef
- 1 medium onion, chopped (1/2 cup)
- 1/3 cup celery, chopped
- 1/3 cup green bell pepper, chopped
- 1/3 cup ketchup
- 1/4 cup water
- 1 Tbsp Worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp red pepper sauce
- 6 hamburger buns, split & toasted (if desired)
Beef Stew, Bologna Style

1) Remove fat from beef. Cut beef into 1" cubes
- 1 1/2 lbs beef boneless sirloin steak, about 1" thick
- 1 Tbsp olive oil
- 4 oz lean bacon, cut into 1/2" pieces
- 1 medium onion, chopped (1/2 cup)
- 1 medium green bell pepper, chopped (1 cup)
- 2 cloves garlic, finely chopped
- 1 Tbsp chopped fresh parsley
- 1 cup sweet red wine or beef broth
- 1 Tbsp balsamic vinegar
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 medium potatoes, cut into 1" pieces
- 1 medium carrot, thinly sliced (1/2 cup)
- 2 fresh or dried bay leaves
