Smoky eggplant dip

- 2 medium eggplants (about 1 pound each)
- 2 tablespoons olive oil, divided
- 1 teaspoon coarse or kosher salt, or to taste
- 6 tablespoons tahini (sesame seed paste), well-stirred if a new container
- 2 garlic cloves, peeled and minced or pressed
- Juice of 1 lemon, plus more to taste, if desired
- Pinch of cayenne or aleppo pepper
- Pinch or two of ground cumin
- 2 tablespoons well-chopped flat-leaf parsley, divided
- Toasted sesame seeds or za’atar for garnish
Spinach with pine nuts and raisins

- 2 Tbsp raisins
- 1 Tbsp hot water
- 1 tsp olive oil
- 1 clove(s) garlic clove(s), minced (medium)

Spinach Salad with Sesame Tofu

Instead of the usual chicken, steak, or shrimp, we used crunchy cubes of sautéed tofu for this salad
- 14 ounces firm tofu, cut into 1/2-in. slices
- 1/4 cup plus 1 1/2 tbsp. grapeseed or vegetable oil, divided
- 1/2 cup cornstarch
- 1/4 cup furikake* (Japanese sesame and seaweed blend) or untoasted black and white sesame seeds
- 1 celery stalk

- 8 to 10 radishes

Grilled Yellow Squash and Zucchini Pasta Salad

- 16 ounces farfalle (bowtie) pasta
- 1 pound yellow summer (crookneck) squash, cut into 1-in. chunks
- 1 pound zucchini, halved lengthwise and cut into 1-in. chunks

- 2 tablespoons Champagne vinegar

- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- Glaze:
- 2 tablespoons sugar
- 1 tablespoon water
- 1 tablespoon dark corn syrup
- 2 teaspoons butter
- 1 ounce semisweet chocolate, chopped
