Porcupine Meatballs

This recipe was loved by both of my girls when they were younger - and today as well
- 1 1/2 pounds lean ground beef
- 1 egg, beaten
- 2 or 3 (10.75-ounce) cans Tomato Soup
- 1/4 cup rice, uncooked
- 1/4 teaspoon salt
- 1/2 cup water
- 1 to 2 tablespoons Worcestershire Sauce
- 2 tablespoons onion, chopped (optional)
- Pepper, to taste
- Rice, cooked
Chicken and Rice Dish

This is a recipe that my Aunt Glori made when I stayed with her over the summers as a young girl
- 3 - 4 chicken breasts
- 3 - 4 chicken thighs
- 1 pkg. Lipton Onion Soup Mix
- 1 cup milk
- 4 cups water
- 4 cups rice, UNcooked
- Two 10 3/4 oz. cans Cream of Chicken soup
Cheese Popovers

This appetizer is perfect for any gathering
- 1/2 cup all-purpose flour
- 1/2 tsp salt
- 1/2 cup whole milk
- 1 large egg
- 1/2 cup grated Cheddar cheese OR Gruyere cheese
- 1 Tbsp chives, finely chopped (opt)
- Nonstick cooking spray
Jay's Spaghetti Sauce and Meatballs

Mold the ground beef into small meatballs and brown them thoroughly in a large skillet
- 1 1/2 lb. ground beef
- 28 oz. jar Prego Meat Flavored Spaghetti Sauce
- Two 4 oz. cans Green Giant Mushroom Stems and Pieces
- 4 oz. can tomato paste
- 1 1/8 cup water
- 3 tsp garlic powder
- 1/2 tsp garlic salt
- Parmesan Cheese
Fresh Sweet Corn

This is a recipe that I received from my Aunt Glori and it is the best recipe for freezing fresh Iowa sweet corn!
- 24 medium size ears of corn (16 cups of fresh corn)
- 2 1/2 cups water
- 1 stick margarine
- 1/4 cup sugar
- 1/2 tsp. salt
Veggie Appetizer

This is an easy appetizer that will go with any meal
- 1 tube (8 oz.) refrigerated crescent rolls
- 1 package of Hidden Valley Ranch Dip Party Mix
- 16 oz. container of sour cream
- 2-3 broccoli florets, cut into mini florets
- 1 Roma tomato, diced small
- 1 large carrot, peeled and diced small
- 1/2 green pepper, diced small
Hamburger Pot Pie

This was a favorite dish when I was growing up that my Mom made especially on cold days
- 1 1/2 lbs. lean Ground Beef
- 10 3/4 oz. can of Cream of Chicken Soup OR Cream of Mushroom Soup
- Two 14 1/2 oz. cans French Style Green Beans, drained
- 1 box Pillsbury Ready Crusts
- 1 Tbsp sugar

Butter Based Injection Marinade

- 1/2 cup chicken broth
- 2 Tbsp butter
- 1 Tbsp lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp finely ground pepper

- 18.25 oz. box cake mix of your choice
- 2 quarts ice cream of your choice, softened slightly
- Use the ice cream that comes in a rectangular carton*

- 2 sticks oleo OR butter
- 2 cups sugar (or you can substitute with 1 1/2 cups)
- 2 egg yolks
- 2 tsp vanilla
- 5 cups flour
- 5 tsp baking powder
- 2 tsp baking soda
- 1 cup buttermilk
- 1 cup sour cream
- 1 tsp salt
