This is a great blend of a Mexican and Italian dish into one fabulous meal

  • 1 1/2 lbs ground beef
  • 1/2 cup bread crumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 2 Tbsp freshly chopped cilantro, plus more for garnish
  • 1 tsp chili powder
  • 3/4 tsp ground cumin
  • 3/4 tsp dried oregano
  • 1 small onion, chopped
  • 1 jalapeño, minced
  • 2 - 10 oz. cans enchilada sauce
  • 3/4 of a 15 oz. can black beans, drained
  • 11 oz. can Green Giant Super Sweet White Corn, drained
  • 1 cup shredded cheddar cheese
  • 2-3 Tbsp Olive Oil
  • Salt
  • Pepper
