Enchilada Meatballs

This is a great blend of a Mexican and Italian dish into one fabulous meal
- 1 1/2 lbs ground beef
- 1/2 cup bread crumbs
- 1 egg
- 2 cloves garlic, minced
- 2 Tbsp freshly chopped cilantro, plus more for garnish
- 1 tsp chili powder
- 3/4 tsp ground cumin
- 3/4 tsp dried oregano
- 1 small onion, chopped
- 1 jalapeño, minced
- 2 - 10 oz. cans enchilada sauce
- 3/4 of a 15 oz. can black beans, drained
- 11 oz. can Green Giant Super Sweet White Corn, drained
- 1 cup shredded cheddar cheese
- 2-3 Tbsp Olive Oil
- Salt
- Pepper

- 3 Tbsp Liquid Smoke
- 3 Tbsp Rock Salt OR 2 Tbsp Hawaiian Rock Salt (it is from Hawaii and is red in color)
Pumpkin Banana Bread

This is an excellent alternative to the normal Banana Bread
- 2 cups sugar
- 2/3 cup vegetable oil
- 4 eggs
- 3 1/3 cups all-purpose flour
- 2 tsp baking soda
- 1 1/2 tsp salt
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 2/3 cup water
- 15 oz. can pure pumpkin
- 3/4 - 1 cup ripe banana, mashed
- 3/4 cup pecans, chopped
- Non-stick Cooking Spray
Cherry Tomato Caprese Salad

This is a very refreshing recipe on a hot summer day
- 2 pints (16 oz.) cherry or grape tomatoes, sliced in half
- 8 oz. fresh mozzarella cheese, cut into 1/2 inch cubes and patted dry
- 1 cup fresh basil, chopped
- 1/2 tsp sugar
- 1 Tbsp balsamic vinegar
- 1 clove garlic, minced
- 2 Tbsp extra-virgin olive oil
- Salt and Pepper
Rustic Swiss Steak

This savory recipe adds a rustic flavor to the classic Swiss Steak meal
- 2 1/2 lbs. Beef Bottom Round, tenderized
- 1 large onion, diced
- 16 oz. package Baby Carrots
- 2 cloves garlic, chopped
- 2 stalks celery (optional)
- 14 1/2 oz. can Diced Tomatoes with Basil, Garlic, and Oregano
- 3 cups beef broth
- 2 Tbsp tomato paste
- 1 tsp paprika
- 1 tsp oregano
- 1 Tbsp Worcestershire Sauce
- 2 tsp salt
- 1 tsp pepper
- 1 cup flour

- 3 cups Quaker Oats
- 3 cups water
- 1/4 cup packed light brown sugar
- Two 1 1/2 oz. boxes of raisins (1/2 cup raisins)

- 2 cups brown sugar, packed
- 4 tsp cinnamon

- 1/2 cup honey
- 1 cup vegetable oil
- 2 cups green tomatoes, chopped
- 4 eggs
- 1 cup walnuts, chopped
- 1 1/2 cups raisins
