Homemade Egg Nog

Beat all ingredients together in a blender
- 2 eggs, well beaten
- 1 Tbsp sugar
- 1 cup milk
- 1/2 tsp vanilla extract
- 1 cup Vanilla Flavored Ice Cream
- 1/2 tsp nutmeg
Mixed Berry Cobbler

This cobbler has a tart but fruity flavor that combines perfectly with vanilla ice cream!
- Filling:
- 16 oz. package fresh strawberries, sliced
- 6 oz. package fresh blackberries
- 6 oz. package fresh raspberries
- 6 oz. package fresh blueberries
- 2 Tbsp lemon juice
- 1/2 cup + 4 Tbsp sugar, divided
- 3 Tbsp cornstarch
- Topping:
- 1 1/2 cups flour
- 1 1/2 tsp baking powder
- 1 cup brown sugar
- 6 Tbsp chilled butter
- 1 tsp cinnamon
- 1/4 tsp salt
- 3/4 cup heavy cream
Heather's Roasted Garlic Mashed Potatoes

This is a "kicked-up" version for my usual Mashed Potatoes recipe
- 12 medium sized Russett potatoes (approx. 5" long), peeled and cut into wedges
- 1/2 stick margarine
- 3/4 - 1 cup milk
- 2 - 3 heads of fresh garlic
- Olive Oil
- Salt
- Pepper
Cinnamon Roll Icing

- 4 cups Apple Cider
- 1 cup Pear Nectar (this can be substituted with White Grape Juice)

- 1 stick margarine
- 1/2 cup brown sugar
- 1 cup walnuts, chopped
- 1 tsp cinnamon
- 10-14 Jet Puffed regular sized marshmallows
Santa Fe Chicken Salad

This is a savory and satisfying alternative to any sandwich
- 4 Boneless Skinless Chicken Breasts, cut into strips
- 10 oz. bag Hearts of Romaine Lettuce
- 1/2 head of Iceberg Lettuce, shredded
- 1 Medium Green Pepper, chopped
- 1 Medium Red Onion, chopped
- 2 large Tomatoes, cut into chunks
- 15 oz. can Bush’s Black Beans, drained (cold OR warmed)
- 11 oz. can Green Giant Mexicorn, drained
- 12 oz. package Shredded Cheese (you choose the blend of cheeses)
- 3.5 oz. package of Fresh Gourmet Santa Fe Style Tortilla Strips
