Slow-Cooker Chicken Tortilla Soup

Directions Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker
- 1 pound shredded, cooked chicken
- 1 (15 ounce) can whole peeled tomatoes, mashed
- 1 (10 ounce) can enchilada sauce
- 1 medium onion, chopped
- 1 (4 ounce) can chopped green chile peppers
- 2 cloves garlic, minced
- 2 cups water
- 1 (14.5 ounce) can chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bay leaf
- 1 (10 ounce) package frozen corn
- 1 tablespoon chopped cilantro
- 7 corn tortillas
- vegetable oil
Pizza Dough

In a small bowl, dissolve yeast in warm water
- 1 (.25 ounce) package active dry yeast
- 1 cup warm water (110 degrees F/45 degrees C)
- 2 cups bread flour
- 2 tablespoons olive oil
- 1 teaspoon salt
- 2 teaspoons white sugar

Put chicken in a large pot, cover with water and bring to a boil After about 20 minutes, skim off the icky foa
- 1 whole raw chicken (with bones & skin for flavor) cut into it's parts
- 3 celery stalks, cut into 2 inch pieces
- 1 large onion, cut into big pieces
- 2 carrots, cut into big pieces
- 3-4 stems of thyme (or about 1 teaspoon dried)
- 3 ounces 'fine' egg noodles
- Chicken broth/stock, optional

- 2/3 cup natural peanut butter
- 1/2 cup sugar or other sweetener, to taste

- 1/4 cup(s) water
- 1 Tbsp red wine vinegar
- 2 tsp olive oil
- 1 tsp fresh lemon juice
- 1/2 tsp table salt
- 1/4 tsp black pepper, freshly ground
- 2 spray(s) cooking spray
- 1 pound(s) Chicken, breast, raw, without skin & bone, four 4-oz pieces
- 1 medium sweet red pepper(s), sliced into 1-inch strips

Sour Cream Horseradish Sauce

Mix all the ingredients together and let it rest for up to a day before serving
- 2 cups sour cream
- 1 Tablespoon champagne vinegar
- A palmful of chopped chives
- As much freshly ground horseradish as you can take (more is better!)
