- 1 tablespoon olive oil
- 2 cups chopped onions or leeks
- 1 medium green bell pepper, seeded and finely diced
- 1/2 cup red wine
- 10 ounces cremini or button mushrooms, sliced or quartered
- 3 pounds bone-in skinned chicken breast halves, thighs, or a combination
- 2 cups good-quality tomato sauce
- 2 tablespoons tomato paste
- One can (6 ounces) pitted black olives, drained
- 2 tablespoons chopped fresh parsley or basil, plus more for garnish (optional)
- 1/8 to 1/4 teaspoon crushed red pepper flakes (optional)
- 1/2 cup grated parmesan or romano cheese, plus more to pass at the table
- Salt and freshly ground pepper

- 1 1/2 cups chopped yellow onions (1 large onion)
- 1 tablespoon minced garlic (3 cloves)
- 1/2 cup vegetable oil
- 1 cup tomato paste (10 ounces)
- 1 cup cider vinegar
- 1 cup honey
- 1/2 cup Worcestershire sauce
- 1 cup Dijon mustard
- 1/2 cup soy sauce
- 1 cup hoisin sauce
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1/2 tablespoon crushed red pepper flakes

- 2 to 3 fresh peaches ripe, pitted
- 1/2 teaspoon vanilla extract
- 3/4 cup sugar or other sweetener, to taste

- 1/2 cup chocolate milk mix
- 1/2 cup sugar or other sweetener, to taste
