Fettuccini with Walnuts and Parsley

Cook the pasta al dente according to package directions, then drain in a colander
- 12 ounces (3/4 box) whole-wheat fettucine
- 2/3 cup chopped toasted walnuts, 2 tablespoons reserved for garnish
- 1/4 cup olive oil
- 5 cloves garlic, minced
- 1/2 cup low-sodium chicken stock
- 1/2 cup chopped parsley leaves, plus more for garnish
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
- 1-ounce grated Parmesan (about 3/4 cup)
- 2 cups arugula leaves, gently packed

- 3/4 cup pitted dates (I like Sunmaid, because they are softer.) (120g)
- 1/2 tsp pure vanilla extract
- 1/16 tsp salt
- 2 T cocoa powder (or raw cacao powder)
- 2 T shredded coconut
- 1/3 to 1/2 cup raw pecans
- optional: feel free to add some chocolate chips

Chicken Breasts in Lemon Cream Sauce

Season chicken breasts with lemon pepper, salt, dill weed, and garlic powder
- 4 boneless, skinless chicken breast halves
- 1 teaspoon lemon pepper
- 1 teaspoon salt
- 1 teaspoon dried dill weed
- 1 teaspoon garlic powder
- 1 1/2 tablespoons butter
- 1 1/2 tablespoons olive oil
- 1/4 cup white wine
- 1/2 cup whipping cream
- 1 t. lemon juice
Winter Fruit Salad With Lemon Poppy Seed Dressing

I had this at a friends house & had to have the recipe
- 1/2 cup white sugar
- 1/2 cup lemon juice
- 2 teaspoons diced onions
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 2/3 cup vegetable oil
- 1 tablespoon poppy seed
- 1 head romaine lettuce, rinsed, dried and torn into bite
- 4 ounces shredded swiss cheese
- 1 cup cashews
- 1/4 cup dried cranberries
- 1 apple, peeled, cored and cubed
- 1 pear, cubed
Healthy Frosty (packed with protein!)

- serves one
- 3/4 cup (6 ounces) almond milk (or milk of your choice, i use unsweetened vanilla almond breeze by blue diamond)
- 15 ice cubes.. maybe more!
- 1 scoop vanilla protein powder (use your favorite brand–it’s important that you enjoy the flavor. i like MRM whey natural vanilla or plant fusion vanilla bean)
- 1-2 TB unsweetened cocoa powder (depending on how chocolatey you like it)
- 1/4 tsp xanthan gum (this is the KEY ingredient)
- 1/4 tsp guar gum (or use more xanthan if you don’t have guar)
- sweetener of choice (in this one i used 1/4 of a frozen banana for my sweetener, but i always switch it up. other ideas: stevia packet, a few dates, xylitol, or agave)
