Cream of Cauliflower and Cheese Soup

Melt butter in large saucepan; sauté onion until tender
- 2 tbsp (30 mL) butter
- 1/2 cup (125 mL) chopped onion
- 3 cups (750 ml) coarsely-chopped fresh cauliflower
- 1 can (10 oz/284 mL) condensed chicken broth
- 1/4 cup (60 mL) all-purpose flour
- 2 1/2 cups (625 mL) milk
- 1 1/2 cups (375 mL) shredded Cheddar cheese
- Salt and pepper, to taste
- Buttered Croutons
- Chopped parsley
Ricotta Cheese Cookies

Preheat oven to 350. Mix flour, baking powder, & salt in a medium bowl, set aside
- 2 c. sugar
- 1 c. (2 sticks) butter, softened
- 1 15 oz. container ricotta cheese
- 2 t. vanilla
- 2 large eggs
- 4 c. flour
- 2 T. baking powder
- 1 t. salt
- 1 1/2 c. confectioners sugar
- 3 T. milk
- Red & Green sugar crystals
Red Pepper-Salmon Pasta

"Baked salmon served with a red pepper sauce over angel hair pasta
- 4 (4 ounce) fillets salmon
- 2 tablespoons lemon juice
- 1/2 cup roasted red bell peppers
- 1/3 cup grated Parmesan cheese
- 1 tablespoon cornstarch
- 2 teaspoons minced jalapeno peppers
- 1 clove garlic, minced
- 1/4 cup chopped fresh cilantro
- 1 cup chicken broth
- 1 (8 ounce) package angel hair pasta
Homemade Black Bean Veggie Burgers

If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil
- 1 (16 ounce) can black beans, drained and rinsed
- 1/2 green bell pepper, cut into 2 inch pieces
- 1/2 onion, cut into wedges
- 3 cloves garlic, peeled
- 1 egg
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 1 teaspoon Thai chili sauce or hot sauce
- 1/2 cup bread crumbs
Baked salmon filets with orange marmalade sauce

Place salmon filets skin side down on greased baking pan Bake in a 425* oven for 12-15 mins
- 4-4 oz salmon filet
- 2 tsp olive oil
- 1 clove minced garlic
- 2 T orange marmalade
- 1 T orange juice
- salt and cracked black pepper or lemon pepper and garlic salt to taste
Baked Lemon Pasta

Preheat oven to 375 degrees
- 1 lb whole wheat spaghetti
- 2 Tbsp unsalted butter
- 4 garlic cloves, minced
- 1 large lemon, juiced and zested
- 2 cups 2% plain Greek yogurt
- 1/2 tsp kosher salt
- 2 oz (1/2 cup) pecorino romano cheese, grated
- 1/3 cup parsley, chopped
- extra lemon juice, to taste
Basic Green Smoothie Recipe

Blend
- 1.5 cups peaches (approximately 2 peaches) – I use frozen fruit
- 6 ounces orange juice
- 6 ounces water
- 1 banana – fresh or frozen
- 2-3 handfuls of spinach or as much as your blender will hold
Chocolate Cookie Pizza

- 2 (16 1/2-ounce) packages chocolate chip cookie dough (recommended: Nestle Tollhouse)
- 1/2 cup heavy whipping cream
- 4 ounces chopped semisweet chocolate
- 1/2 cup toffee chips
- 1/4 cup chopped pecans
Christmas Fruit Kabobs

Directions Alternately thread fruit onto wooden skewers
- 1/2 fresh pineapple, trimmed and cut into 1-inch chunks
- 4 kiwifruit, peeled and cut into 1-inch pieces
- 3 navel oranges, peeled and sectioned
- 3 medium apples, cut into 1-inch pieces
- 3 medium firm bananas, cut into 1-inch pieces
- 1 jar (10 ounces) maraschino cherries, drained
- Fruit Dip (optional)
Spicy Shrimp with Garlic and Parsley Appetizer

In a sauté pan over medium heat, warm the olive oil
- 4 to 5 Tbs. olive oil
- 4 garlic cloves, finely minced
- 1 tsp. red pepper flakes
- 1 tsp. sweet paprika
- 1 lb. medium shrimp, peeled and deveined
- 1 to 2 Tbs. fresh lemon juice
- 1 to 2 Tbs. dry white wine
- salt and freshly ground black pepper, to taste
- 2 Tbs. chopped fresh parsley
- lemon pepper pasta for serving, optional (I got the pasta from Trader Joe's)
