Mom's Buttermilk Pancakes

Preheat and lightly grease a large skillet or electric griddle
- 1 cup flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 egg
- 1 1/8 cups buttermilk
- 2 tablespoons butter, melted
Garlic Chicken

Directions Preheat oven to 475 degrees F (220 degrees C)
- 2 teaspoons crushed garlic
- 1/4 cup olive oil
- 1/4 cup dry bread crumbs
- 1/4 cup grated Parmesan cheese
- salt & pepper
- 4 skinless, boneless chicken breast halves
Italian Dressing Mix

In a small bowl, mix all dry ingredients
- 1 T. Garlic Salt
- 1 T. Onion Powder
- 1 T. White Sugar
- 2 T. Dried Oregano
- 1/2 t. black pepper
- 1 1/4 t. Dried Basil
- 1 T. Dried Parsley
- 1/4 t. Celery Salt
- 1/4 c. Balsamic Vinegar
- 2/3 c. Olive Oil
- 2 T. Water
- (Will use 2 T. dry mix with above liquid)
Taco Salad

Brown ground beef and add taco seasoning, make according to package directions
- Dressing:
- 1 lb. ground beef
- 1 package taco seasoning mix
- 1 medium head of iceberg lettuce, chopped
- 2 c. shredded cheddar cheese
- 2 large tomatoes, diced
- 1 can sliced black olives, drained
- 1 bag tortilla chips, crushed
- 1 jar salsa
- 1 pint sour cream
RED ENCHILADA SAUCE

Heat oil in a small saucepan over medium-high heat
- 2 Tbsp. Organic Canola Oil
- 2 Tbsp. all-purpose or gluten-free flour
- 1 1/2 Tbsp. chili powder (or more per taste)
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 tsp. cumin
- 1/4 tsp. oregano
- 2 cups chicken or vegetable stock
