Barley Almond Casserole

Melt butter. Saute onions and mushrooms
- 1/2 cup butter
- 2 medium onions, chopped
- 3/4 lb mushrooms, chopped (or 1 can mushrooms, chopped)
- 1 1/4 cup pearl barley
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cups canned chicken broth
- 4 oz slivered almonds
Thick Spaghetti Sauce

In 12 quart dutch oven over medium heat, cook onions and garlic in oil until tender
- 1/2 cup salad oil
- 4 medium onions, diced
- 4 garlic cloves, minced
- 16 lbs tomatoes, peeled and diced
- 2 12 oz can tomato paste
- 1/4 cup sugar
- 1/4 cup chopped parsley or 2 tbsp parsley flakes
- 2 tbsp oregano leaves
- 2 tbsp salt
- 2 tsp basil
- 3/4 tsp pepper
- 2 bay leaves
Creamy Scalloped Potatoes

Peel and thinly slice potatoes
- 2 pounds potatoes (about 6 medium)
- 3 tbsp margarine
- 3 tbsp flour
- 1 tsp salt
- 1/4 tsp pepper
- 2 1/2 cups milk
- 1 small onion, finely chopped
- 1 tbsp margarine
Chicken Stir-Fry with Noodles

Place the oil and garlic in wok and heat up
- SAUCE:
- 1 pkg Chinese style steam fired noodles
- 2 tbsp oil
- 1 tsp oil
- 1 lb chicken, uncooked and sliced
- 1 cup celery, sliced
- 1 cup onions, sliced
- 1 bunch broccoli, broken up
- 1 cup bok choy, sliced
- 1 cup bean sprouts
- 1 cup sliced mushrooms
- 1/2 cup water, or more
- 2 to 3 tbsp soya sauce
- 1 tbsp cornstarch
- 1/2 to 1 tsp ground ginger
Chicken Pot Pie

Melt margarine, blend in flour, add milk gradually, stirring constantly
- VELOUTE SAUCE:
- 1/4 cup margarine
- 1/4 cup flour
- 1 cup milk
- 1 1/2 cups boiling wter
- 2 OXO chicken cubes
- 1/2 tsp salt
- 1/4 tsp pepper
- FILLING MIXTURE:
- 2 1/2 cups (or more) diced chicken or turkey
- 1 tsp salt
- 1/4 tsp pepper
- 2 cups cooked carrots, diced
- 1 12 oz pkg cooked frozen peas
- 1 Veloute sauce recipe
- TOPPING:
- 1 1/2 cups biscuit mix
- 1/2 cup sour cream
- 1 egg, beaten

Heat oven to 350 degrees. Mix all ingredients except nuts in shallow baking dish
- 1 pkg cream cheese softened
- 1 1/2 cups crumbled MacLaren's Imperial Sharp Cold Pack Cheddar Cheese Product
- 1/3 cup mayonnaise
- 3 slices bacon, cooked, crumbled
- 2 green onion, chopped
- 2 Tbsp. chopped toasted pecans
Greek Salad II

Layer letuce in large salad bowl or on large platter
- 1/2 head lettuce, torn bite size
- 1 head romaine lettuce
- 2 tomatoes, cut bite size
- 1 cucumber, cut bite size
- 1/4 cup sliced green or red onion
- 1/4 cup sliced ripe olives
- 3/4 cup Feta cheese, cubed
- 1/2 cup salad oil
- 1/4 cup red wine vinegar
- 1/4 cup chopped parsley
- 1/2 tsp salt
- 1/8 tsp pepper
- 1/8 tsp oregano
- 1/8 tsp garlic powder

Mix salad ingredients into a large bow
- 1/2 bag cleaned spinach
- 1-2 eggs, hard boiled and cooled
- bacon bits
- 1/2 cup cheddar cheese, shredded
- DRESSING
- 1 clove garlic, minced
- 6 tbsp salad oil
- 2 tbsp cider or red wine vinegar
- 1 tsp sugar
- 1 tsp dry mustard
- 1 tsp salt
- 1/2 tsp pepper
Lazy Perogy Casserole

Cook noodles. Line bottom of 9x13 inch pan with a layer of noodles
- 15 lasagna noodles
- 2 cups cottage cheese
- 1 egg
- 1/4 tsp onion salt
- 1 cup grated cheddar cheese
- 2 cups mashed potatoes
- Salt and pepper to taste
- 1/4 tsp onion powder
- 1 cup butter or margarine
