Jamaican style Black Bean and Coconut Cornbread Bake

Preheat oven to 350 degrees
- 2 - 15 oz cans black beans, rinsed and drained
- 1 - 14.5 oz can diced tomatoes with mild green chilies, juices included
- 1 1/2 C frozen yellow corn, thawed
- 1/2 t jerk seasoning
- 1/2 t salt
- 1/8 t pepper
- 1/2 C all purpose flour
- 1/2 C cornmeal
- 2 Tbsp apple sauce
- 1 T sugar
- 1 1/4 t baking powder
- 2/3 C light coconut milk

1. Heat a large skillet over high heat
- 1 pound skinless, boneless chicken breasts (or tilapia), cut into 1/4-inch strips
- 3/4 teaspoon ancho chile powder
- 1/2 teaspoon garlic salt
- 1/4 teaspoon ground cumin
- Cooking spray
- 1/8 teaspoon grated lime rind
- 2 tablespoons fresh lime juice, divided
- 1/4 cup light sour cream
- 2 tablespoons 1% low-fat milk
- 1/2 ripe peeled avocado, diced
- 2 cups packaged angel hair slaw
- 1/2 cup thinly sliced green onions
- 1/4 cup chopped fresh cilantro
- 1 tablespoon canola oil
- 1/4 teaspoon salt
- 8 (6-inch) corn tortillas

- Dipping Sauce:
- 2 tsp extra virgin olive oil
- 12 large eggs
- 1/2 C Breakstone's Sour Cream
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1 1/2 C grated pepperjack cheese
- 1/4 C chopped roasted red bell peppers
- 1/4 C sliced green onions
- 1/4 C chopped cilantro
- 1-2 tsp hot sauce

Combine the beans, lettuce, and most of the almonds in a large salad bowl
- 1 1/2 cups cooked chickpeas
- 1 1/2 cups cooked pinto beans
- 1 1/2 cups cooked black beans
- 1 small head of romaine, washed, dried, shredded
- 1/3 cup sliced almonds, toasted
- 2 teaspoons extra-virgin olive oil
- 1 1/2 tablespoons runny honey
- 2 tablespoons balsamic vinegar
- 1 1/2 tablespoons fresh lemon juice
- 1/4 + teaspoon fine grain sea salt
- 10 sprigs fresh thyme

- 1 cup dark chocolate chips
- 1/4 cup coconut oil (not melted)
- 1 1/2 teaspoons decaf finely ground espresso beans
