Preheat the oven to 350F and line a baking sheet with parchment
- 1 1/3 cup gluten-free all-purpose flour
- 2/3 cup coconut flour (if you sub this out make sure to minus an equal amount of "milk")
- 1 tablespoon baking powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 3-4 tbsp sugar/maple syrup
- 7-8 tablespoons Coconut Butter
- 1/2 cup canned pumpkin
- 1/3 cup almond milk whisked with 1/2 tsp ACV
- 1 tsp pure vanilla extract
- 1 chia/flax egg (1 tbsp ground chia/flax + 4 tbsp water)
- Turbinado sugar, to garnish

Peanut Butter and Coffee Curry

- 1 cup green peas
- 1 cup cubed firm tofu

- 1 cup chopped onions

Portabella Pizza with Cashew Basil Cheese Sauce

Preheat oven by setting the broiler on low
- 8 Portabella mushrooms
- 2 cups pizza sauce
- Vegan Cashew Basil Cheese Sauce (see recipe below)
- 1/3 cup of each: red, green, orange pepper, diced
- 1/3 cup sweet onion, diced
- 2-3 large basil leaves, finely diced
- 1 tsp red pepper flakes
- Vegan Cashew Basil Cheese Sauce
- 1 cup raw cashews
- 1/3-1/2 tsp Himalayan sea salt, to taste
- 1/2 tsp cold-pressed sunflower oil
- 1 fresh basil leaf
- 1 small clove garlic
- 1.5 tbsp nutritional yeast
- 1 tbsp fresh lemon juice

1. Preheat oven to 350F and line a cupcake pan with cupcake liners
- 1 cup non-dairy milk (I used Vanilla Almond milk)
- 1 cup sugar (I used natural cane sugar)
- 1/3 cup extra virgin olive oil (or grapeseed)
- 1 tbsp apple cider vinegar
- 1 tbsp pure vanilla extract
- 1/2 tsp pure almond extract (optional, but awesome)
- 1.5 cups unbleached all-purpose flour
- 1/3 cup cocoa powder, sifted
- 1 tsp baking soda
- 3/4 tsp kosher salt, to taste
White Bean Salad

- 2 big handfuls baby spinach, washed and dried
- 2 cans white cannellini beans (or fresh equivalent)
- 2 handfuls walnuts, toasted
- a couple glugs of citrus-flavored olive oil

- 3 leaves romaine
- 1 cucumber, chopped
- 2 large tomatoes
- 1 small avocado
- sea salt
- 2 Tbsp lemon juice
- 3 sundried tomato halves, soaked
- 1 celery stalk chopped
- 1/2 tsp cumin
- pinch cayenne
- 1/2 Tbsp chili powder
- Toppers-corn, chopped peppers etc.
Easy Pineapple Avocado Summer Salsa

Whisk together: Juice of Limes, Honey , and Sea Salt in small bowl
- Juice from 1 large Lime (or 2 medium sized Limes)
- 1 Teaspoon Raw Honey
- 1/2 teaspoon Sea Salt
- 1 Pineapple – cut into 1/2 inch pieces
- 2 ripe Avocados – cut into 1/2 inch pieces
- 1 jalapeno Pepper – seeded and finely diced
- 1/2 cup Red Onion – finely diced
- 1/4 Cup Fresh Cilantro – finely chopped
Corn and Two-Bean Burgers with Chipotle Ketchup

- 2 tablespoons olive oil
- 1 (15-ounce) can kidney beans, rinsed and drained
- 1 (15-ounce) can black beans, rinsed and drained

- 1/4 cup canned whole-kernel yellow corn, drained
- 1/4 cup prechopped onion
- 1 large egg
- KETCHUP:
- 1/3 cup ketchup
- 1 teaspoon honey
- 1 teaspoon lime juice
- 1/2 teaspoon chipotle chile powder
- 1/2 teaspoon ground cumin
- REMAINING INGREDIENTS:
- 4 (2-ounce) Kaiser rolls or hamburger buns
