- 1 bunch broccoli florets
- 1 large or 2 small ripe avocados
- 1 cucumber
- juice of 2 lemons
- 1 clove garlic
- 1/4 cup parsley, minced
- 1/4 cup cilantro, minced
- 1 1/2 cups coconut water or celery juice, for desired thickness

- 3 tablespoons chia seeds
- 6 tablespoons fresh lemon juice (approx 1.5 lemons)
- 1.5 cups regular oats, ground into a flour
- 1/2 cup regular oats (not ground)
- 1 tsp baking powder
- 1/2 tsp kosher salt
- 1.5 cups unsweetened shredded coconut + additional for sprinkling
- 2 tablespoons lemon zest
- 1/2 cup unsweetened applesauce
- 1/3 cup Agave nectar
- 4 tablespoons coconut oil, melted
- 1/4 cup pistachios
- 1/2 cup dried cranberries
Vegan Thai appetizer pizza

In small bowl, mix vegan cream cheese, peanut butter, ginger and ground red pepper
- pizza crust cooked and cooled
- 1/2 cup chive and onion vegan cream cheese
- 1/4 cup (50 mL) creamy peanut/sunflower butter
- 1/2 tsp (2 mL) ground ginger
- 1/4 tsp (1 mL) cayenne pepper
- 1/2 cup (125 mL) shredded carrot
- 1/2 cup (125 mL) chopped red pepper
- 1/2 cup (125 mL) chopped seeded cucumber
- 1/4 cup (50 mL) chopped salted peanuts

- 1/4 c walnuts (or pecans)
- 1/3 c almond meal (or 1/3 c raw almonds ground)

Preheat oven to 400F. Grease a pie pan
- 2 cups whole grain spelt flour
- 1/4 cup coconut oil/grapseed oil mixture
- 1/4 cup applesauce or more coconut oil
- 1/4 cup Sucanat (or brown sugar might work)
- 1 large banana, sliced
- 1/2 cup Almond Milk (adapted from 1/4 cup which was an error)
- 1 tsp cinnamon
- 1/4 tsp sea salt
- 3/4 cup jam-or enough to cover
- 1/3-1/2 cup peanut butter
- Cacao Nibs (optional)
- Coconut, to garnish (optional)

- 6 cups fresh or frozen berries (if frozen, thaw slightly)
- 1/4 cup sugar
- 2 tbsp cornstarch
- 3 tbsp unsalted butter, cut into 1/2 inch cubes
