Scrambled Egg Muffins

1.Preheat oven to 400 degrees
- Nonstick cooking spray
- 4 slices nitrate-free turkey bacon
- 3 large egg whites
- 1 large egg
- 1/2 cup chopped, low-sodium chickpeas, rinsed and drained
- 1/4 cup nonfat (skim) milk
- 4 teaspoons grated Parmesan cheese
Quick & Easy Pizza Dip

Preheat the oven to 400°F
- 3 carrots cut into long sticks
- 3 celery ribs, cut into long strips
- 1/2 head cauliflower, cut into bite size pieces
- 1/2 head broccoli, cut into bite-size pieces
- 1 cup skim milk ricotta cheese
- 3 tablespoons sundried tomato pesto
- 5-6 leaves basil, chopped thinly
- extra virgin olive oil spray
- 1 tablespoon garlic powder
- 1 tablespoon dried oregano
- 4 pitas, cut into pizza triangle shapes
Cinnamon Donut Holes

Chop Brazil nuts in food processor until fine
- Topping:
- 2 C Brazil Nuts
- 1/2 C Oat Flour (made from raw oats)
- 1 C Flaked Oats (raw)
- 1/3 C Coconut Oil
- 1/3 C Maple Syrup (not raw)
- 1/3 C Sucanat (not raw but not processed)
- 1 1/2 t. Cinnamon
Sloppy Turkey Joes

Recipe adapted from Rachael Ray
- 2 tablespoons grapeseed or coconut oil
- 1 package, 1 1/3 pounds, ground turkey breast or lean ground turkey
- 1/2 red onion chopped
- 1/2 red bell pepper chopped
- 1 tablespoon grill seasoning blend (Mrs. Dash seasoning for poultry)
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 cup tomato sauce,( 8- ounce) can
- 4 crusty sandwich rolls, split
Gnocchi Potato Salad

Set a large pot of water over high heat to boil
- 1 lb gnocchi
- 1 bunch asparagus
- 1 1/4 cup peas -frozen or fresh
- 1 1/2 Tbsp dijon
- 1 Tbsp white wine vinegar
- 85-100 ml Extra Virgin Olive Oil
- 1/2 cup roasted red pepper strips, drained
- salt
- pepper
2 Minute Peanut Sauce (Soy Free)

- 1/3 cup peanut butter
- 1/4 cup maple agave blend
- 1/4 cup sesame oil
- 1/4 cup apple cider vinegar or orange juice or white vinegar

No Bake Energy Bars

In a glass dish soak the raisins or goji berries in the boiled water, until water is cool
- 2 1/2 cups rolled oats
- 1/2 cup raw pumpkin seeds
- 1/2 cup raisins or goji berries
- 1/2 cup boiled water
- 1/2 cup almond or peanut butter
- 1/3 cup raw honey or maple syrup
- 1 tsp pure vanilla extract
- 2 Tbsp raw sunflower seeds
- 1 Tbsp chia seeds
- 1 tsp cinnamon
Thai dipping sauce

- 1/4 cup olive oil
- 4 kaffir lime leaves
- 1 Tbsp Nama Shoyu
- 2 Thai red chilies
- 1/2 cup almond butter
- juice of 1 lemon
- 1 cup water
Almond Tahini Dressing

Put all ingredients in a blender and blend on high until smooth and creamy
- 8 oz raw organic Sesame Tahini
- 4 oz raw organic almond butter
- Juice of 1/2 medium sized organic lemon
- 2 medium sized organic garlic cloves
- 1/4 tsp Celtic sea salt or Himalayan crystal salt
- 1 cups filtered or spring water
- Optional 1 tsp chopped fresh Dill
Chipotle Bean Stew

In a medium saucepan over medium heat water saute onion and couscous 5 minutes, stirring frequently
- 1 cup onion, chopped
- 2/3 cup uncooked Israeli couscous
- 2 cup broth
- 2 cans black beans, drained
- 2 tsp minced chipotle in adobo
- 1 large can stewed tomatoes, undrained

- sliced green onions
- cashew cream (sour cream)
- sweet peppers, chopped
- cilantro, chopped
