Rhubarb Custard Pie

- 2 cups rhubarb
- 2 egg yolks
- 1/4 teaspoon salt
- 1 cup sugar
- 2 tablespoons flour
- 1 refrigerated pie crust
- 2 egg whites
- 2 tablespoons sugar

Rice Casserole with Sausage

In a casserole dish (3 quart bowl) pour in cans of soup plus 1/2 can of water, rinsing both cans
- 1 pound smoked sausage
- 1 can beef consomme soup
- 1 can french onion soup
- 1/2 stick butter
- 1 1/4 rice uncooked
Rice Dressing

Cook pork sausage and onions together slowly and drain grease periodically
- 4 pounds pork sausage spicy
- 2 pounds pork sausage mild
- 4 large onions chopped fine
- parsley chopped
- green onions chopped
- 3 cups rice cooked
Roast Beef

Season roast with salt and pepper and place in roasting pan, with fat side up
- 6 pounds rump roast
- 1 can Franco-American Beef gravy
- salt and pepper to taste
Roast in Red Gravy

Make roux with flour and oil and cook until golden brown
- 7 pounds rump roast, trimmed cut in 3" chunks
- 1 1/2 cups flour
- 3/4 cup oil
- 2 medium onions chopped
- 1 large green bell pepper chopped
- 1/2 cup parsley flakes
- 1 (6 oz) can tomato paste
- 1 tablespoon sugar
- 10 beef bouillon cubes
- water

Cookies: Preheat oven to 400 F
- 1 cup butter softened
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 3 cups flour
- 3 large egg whites
- 4 cups powdered sugar, lightly spooned into cup
Rolled Tortillas

Combine all ingredients together, except tortillas
- 10 large flour tortillas
- 1 (8 oz) sour cream
- 1 (8 oz) cream cheese room temperature
- 5 green onions chopped
- 4 ounces chopped green chiles
- 4 ounces chopped black olives
- 1/2 cup shredded cheddar cheese

Soften butter and mix sugar
- 2 sticks butter
- 1/3 cup sugar
- 2 teaspoons water
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour sifted
- 1 cup pecans
