White Bean Vegetable Soup

1. Heat oil in a large pot over medium-high heat
- 2 Tbsp olive oil
- 1 cup thinly sliced carrots
- 1 cup diced onion
- 3/4 cup diced celery
- 1 medium zucchini, diced
- 1 (15-oz can or 1 1/2 cups dried and cooked) can Great Northern beans or cannellini beans, drained and rinsed
- 1 14-oz can diced tomatoes, undrained
- 1 14-oz can fat-free, reduced sodium chicken broth or vegetable broth
- 3 cups water
- 3 Tbsp long grain brown rice
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp fresh ground pepper
- 1 1-lb pkg frozen turkey or beef meatballs, optional
French Apple-Custard Pie

Preheat oven to 325. For the filling, melt 2 Tbsp butter in a large saute pan over medium heat
- Filling:
- 2 Tbsp unsalted butter
- 2 lb baking apples peeled, cored, and thinly sliced (4-6 total)
- 2 Tbsp sugar
- 1 Tbsp dark rum
- 1/4 tsp salt
- 1 Recipe Perfect Pastry Dough, made into a 9-in crust and blind baked
- 2 eggs
- 2 egg yolks
- 1 cup heavy cream
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/8 tsp ground nutmeg
- Almond Topping:
- 1 cup sliced almonds
- 1/3 cup sugar
- 2 Tbsp unsalted butter, softened

- 1 lb sweet potatoes, peeled and diced into 3/4-inch cubes
