  • 1 (8 ounce) package Ancient Harvest Penne Pasta, cooking water reserved
  • 2/3 cup chilled Kale Basil Pesto
  • 1 pint cherry or grape tomatoes
  • Fresh mini mozzarella balls
  • Salt and pepper
  • Fresh basil, to top
  • 1/4 cup raw walnuts
  • leaves from 2 1/2 large kale stems, (or 5 small stems)
  • 1 medium garlic clove
  • 1/2 cup loosely packed fresh basil
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon salt and pepper
  • 1/3 cup extra virgin olive oil

  • 1 tablespoon peanut oil, or as needed
  • 1 teaspoon peeled and minced fresh ginger
  • 1 teaspoon minced garlic
  • 6 green (spring) onions, cut into 2-inch lengths
  • 1/2 teaspoon salt
  • 1/4 pound large shrimp, peeled and deveined
  • 1 small red bell pepper, cut into 1 1/2-inch cubes
  • 1/4 pound fresh shiitake mushrooms, stemmed and sliced
  • 3/4 pound baby bok choy, cut into 2-inch lengths
  • 1 teaspoon Asian sesame oil
