Kale Pesto Pasta Salad

1. Bring a large pot of water to a boil
- For the Kale Basil Pesto:
- 1 (8 ounce) package Ancient Harvest Penne Pasta, cooking water reserved
- 2/3 cup chilled Kale Basil Pesto
- 1 pint cherry or grape tomatoes
- Fresh mini mozzarella balls
- Salt and pepper
- Fresh basil, to top
- 1/4 cup raw walnuts
- leaves from 2 1/2 large kale stems, (or 5 small stems)
- 1 medium garlic clove
- 1/2 cup loosely packed fresh basil
- 1/4 cup grated parmesan cheese
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon salt and pepper
- 1/3 cup extra virgin olive oil
Minestrone Soup

In a Dutch oven combine the tomatoes, water, beans, broth, sweet pepper, seasoning and pasta
- 1 28-oz can diced tomatoes with italian herbs
- 2 cups water
- 1 14-15 oz can garbanzo beans, rinsed and drained
- 1 cup low-sodium vegetable broth
- 1 medium yellow sweet pepper, chopped
- 2 tsp Italian seasoning
- 1 cup dry rigatoni or penne pasta
- 2-3 cups baby spinach

Bring a large pot three-fourths full with water to a boil and salt it lightly
- For Sauce:
- 1 pound fresh thin chinese egg noodles
- 3 tablespoons peanut oil, or as needed
- salt
- 1 tablespoon cornstarch
- 1 cup chicken stock
- 1/2 teaspoon sugar
- 1/4 teaspoon ground white pepper
- 1 1/2 tablespoons soy sauce
- 1 1/2 teaspoons oyster sauce
- For Topping:
- 1 whole chicken breast, boned and skinned
- 1 tablespoon peanut oil, or as needed
- 1 teaspoon peeled and minced fresh ginger
- 1 teaspoon minced garlic
- 6 green (spring) onions, cut into 2-inch lengths
- 1/2 teaspoon salt
- 1/4 pound large shrimp, peeled and deveined
- 1 small red bell pepper, cut into 1 1/2-inch cubes
- 1/4 pound fresh shiitake mushrooms, stemmed and sliced
- 3/4 pound baby bok choy, cut into 2-inch lengths
- 1 teaspoon Asian sesame oil
Slow Cooker Garlic Mashed Potatoes

Lightly coat inside of slow cooker with non stick spray
- 3 lbs. red potatoes, chopped
- 1/4 cup unsalted butter
- 4 cloves garlic, crushed and peeled
- salt and pepper to taste
- 1/2 cup sour cream
- 1/3 cup freshly grated parmesan
- 2 Tbsp milk
- 1/2 tsp thyme
- 1/2 tsp oregano

Place 3/4 of the can of beans, onion, garlic, sun-dried tomatoes, basil, salt and pepper in a food processor
- 1 (15 oz.) can great northern beans, drained and rinsed
- 1/4 medium onion, roughly chopped
- 1 clove garlic
- 1/4 cup sun-dried tomatoes, patted dry
- 3 medium basil leaves
- salt & pepper
- 2 Tbsp. oat flour (grind oats in food processor until fine)

- 1 pound cooked shrimp (30-40 shrimp), peeled and chopped
- 1/2 cup diced celery
- 1/4 cup thinly sliced green onion
- 2 tablespoons freshly chopped basil
- 2 tablespoons freshly chopped parsley
- 1/2 teaspoon lemon zest
- 1 tablespoon cider vinegar
- 3 tablespoons mayonnaise
- Dash of hot sauce
- Freshly ground black pepper, to taste
- 8 ripe Roma tomatoes, sliced in half lengthwise, cored and hollowed out

- Olive oil for coating

- 1 Tbsp red wine vinegar

- Salt and pepper to taste
- For the salad:
- 6 oz goat cheese
- 1 batch caramelized onions
- 1/3 cup candied walnuts
- 3/4 cup alfalfa sprouts
