Mrs. K's Masterpiece Veggie Chili

Sauté onion then add garlic and both peppers in the olive oil
- 3 Tbsp olive oil
- 2 med garlic cloves, crushed
- 2 med onions, chopped
- 1/2 orange pepper, chopped
- 1/2 red/yellow pepper, chopped
- 2 med zucchini, sliced
- 1 bottle dark beer
- 2 cups cherry tomatoes, halved
- 1 15 oz can tomato sauce
- 1 10 oz bag of frozen corn
- 1 can pinto beans
- 1 can kidney beans
- 1 can black beans
- 3 tsp chili powder*
- 2 tsp cumin
- 2 tsp salt
- 1 tsp oregano
- 1/2 tsp black pepper
- 1 Tbsp cocoa powder
- 1 Hot pepper, finely chopped or
- 1/2 poblano
- can use 1tsp of smoked chipotle chili
Shallot Sauce

1. Preheat oven to 350℉
- 10 Tbsp butter
- 5 Tbsp olive oil
- 10 tsp rosemary
- 5 cups chicken or vegetable stock
- 1 1/4 cups onion, finely chopped
- 15 large shallots
- 2 1/2 cups red wine
- 1 1/4 cups balsamic vinegar
- 50 peppercorns
Sun-dried Tomato & Basil White Bean Burger

Place about 3/4 of the beans, onion, sun-dried tomato, basil, salt and pepper in food processor
- 2 cans white kidney beans, drained and rinsed
- 1/2 medium onion, roughly chopped
- 3 cloves garlic
- 1/2 cup sun-dried tomatoes (from bottle packed in olive oil), patted dry
- 4-5 medium basil leaves
- pinch salt
- pinch pepper
- 1/3 cup almond meal
- 1-2 Tbsp olive oil
Marinated Zucchini with Bow Ties

In a large frying pan, heat 3 tablespoons of the oil over moderate heat
- 1/3 cup plus 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 pounds zucchini (about 4), cut in half lengthwise and then cut crosswise into 1/4-inch slices
- 2 1/2 teaspoons salt
- 3/4 pound plum tomatoes (about 6), seeded and diced
- 1/2 cup chopped fresh basil
- 1/4 cup plus 1 tablespoon wine vinegar
- 1 1/2 teaspoons fresh-ground black pepper
- 1 pound bow ties
Nutella Bread

Dough: Pour milk into a bowl
- Dough:
- 3/4 cup milk
- 1 1/2 packets active dry yeast
- 2 1/2 cups bread flour
- 2 1/2 cups pastry flour
- 2 large eggs
- 1/2 cup plus 1 Tbp sugar
- 1 tsp vanilla
- 1/4 tsp salt
- 1 stick unsalted butter, at room temperature
- Chocolate Filling:
- 30 ounces Nutella
- 1 cup semisweet chocolate chips
Macaroni Sea-Shell Salad

Cook sea-shells as directed, rinse with cold water, drain and chill
- 1 pkg. macaroni sea-shells
- 1 1/2 cups diced celery
- 1 green pepper
- 2 Tbsp finely chopped onion
- 2 Tbsp parsley
- 1 1/2 tsp salt
- 1/4 tsp paprika
- 1/4 tsp celery seed
- 2 Tbsp lemon juice
- 2 Tbsp sugar
- 1/2 cup mayonnaise
- Optional: diced carrot for color
Banana Bread (low sugar)

Preheat oven to 175 degrees C (340 F)
- 4 very ripe bananas
- 70 grams (1/3 cup) butter, melted
- 80 grams (1/3 cup) sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 240 grams (1 1/2 cups) all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 60 grams pecans, chopped
Grilled Potato Packets

- 3 onions, finely chopped or sliced thin if you prefer
- 1/3 c butter or non dairy margarine for those of you looking for a totally non dairy margarine earth balance has no milk products in it.
- 3 c boiling chicken broth
- 1/3 c all purpose flour
- salt, pepper and smoked paprika to taste
