Smoky Mac 'n' Cheese

Heat oven to 400℉. Pierce sweet potato several times with a fork
- 1 sweet potato
- 8 oz cremini mushrooms, sliced
- 2 Tbsp canola oil
- 1/2 tsp liquid smoke
- 1 1/2 tsp salt
- 8 oz quinoa elbow pasta
- 1/4 cup non-dairy butter
- 1/4 tsp nutmeg
- 1/2 tsp onion powder
- 1 Tbsp fresh lemon juice
- 1 cup unsweetened almond milk
- 8 oz non-dairy cheddar cheese, shredded (I usually use about 3/4 of bag otherwise it gets too cheesy)

- 1/4 cup butter

- 8 oz cheese (monterey jack and cheddar), cubed
Country Chicken Stew

Cook and stir chicken and onion in hot oil over medium heat until chicken is browned and onion is tender
- 1 lb. boneless, skinless chicken breast cut in 1-in cubes
- 1 small onion, chopped
- 2 Tbsp each oil and flour
- 1 envelope Zesty Italian salad dressing
- 1 can (13 3/4 oz) chicken broth
- 1 1/2 cups water
- 3 carrots, sliced
- 3 stalks celery, sliced
- 1 potato, cut in cubes
- 1 cup frozen peas, optional
Corn Chowder

- 1/2 medium onion, diced (1/2 cup)
- 1 stalk celery, diced (1/3 cup)
- 2 small yellow-flesh potatoes diced (2 1/2 cups)
- 1 10-oz pkg frozen sweet corn (2 cups)
- 1/2 tsp smoked paprika
- 1 bay leaf
- 2 cups low-sodium vegetable broth
