Hot Artichoke Dip

Preheat oven to 375℉. Coarsely chop artichoke hearts
- 2 jars (6.5 oz.) marinated artichoke hearts, drained and coarsely chopped
- 1 pkg (10 oz) frozen chopped spinach, thawed and well drained
- 1/2 cup sour cream
- 1/2 cup mayonaise
- 1 garlic clove, pressed
- 3 oz fresh Parmesan cheese, grated (about 3/4 cup)
Squash with Couscous and Apples

Cut butternut squash in half
- Stuffing:
- 1 Large butternut squash
- 3/4 cup couscous
- 1 cup boiling water
- 1 Tbsp butter
- 1 Tbsp olive oil
- 1/2 medium onion, chopped
- 2 stalks celery, chopped
- 1 apple, peeled, cored and chopped
- 2 Tbsp brown sugar
- 3/4 tsp cumin
- 3/4 tsp cinnamon
- Dash nutmeg
- Dash cayenne
- 1 tsp salt
Cinnamon Streusel Topped Pumpkin Pie

Preheat oven to 375 degrees Farhenheit
- Filling:
- 3/4 tsp ground cinnamon
- 1/4 tsp ground allspice
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- 2 large eggs
- 1 (15 oz) can unsweetened pumpkin
- 1 (14 oz) can fat-free sweetened condensed milk
- Crust:
- 1/2 pkg refrigerated pie dough
- Cooking spray
- Streusel:
- 1/3 cup flour
- 1/3 c packed dark brown sugar
- 1/4 cup regular oats
- 1/4 cup chopped pecans
- 3/4 tsp ground cinnamon
- 1/8 tsp ground ginger
- 2 Tbsp chilled butter, cut into small pieces
- 2 - 3 tsp water
Shrimp and Tomato Piccata

Thaw shrimp, peel and devein
- 1 1/3 pounds fresh or frozen medium shrimp
- 3 Tbsp olive oil
- 8 oz fresh French string beans, trimmed
- 1-2 garlic cloves, minced
- 3 medium tomatoes, cut into wedges
- 3 Tbsp lemon juice
- 1 Tbsp capers, drained
- 2 cups hot cooked pasta
Mediterranian Ravioli

Cook ravioli according to package directions, set aside and keep warm
- 1-25 oz pkg. frozen cheese ravioli
- 1/3 cup olive oil
- 6 garlic cloves, minced
- 2 cups frozen peas, thawed
- 1/2 cup red bell pepper
- 1/2 rd onion chopped
- 1 cup Roma tomatoes, seeded and chopped
- 2 oz. sundried tomato, oil packed, finely chopped
- 1/4 cup fresh basil, chopped
- 5 Tbsp Italian dressing
- 4 Tbsp Romano cheese, grated
Super Sweet Potatoes

In a small bowl, mix together butter or margarine, sugar, walnuts (if using), cinnamon, nutmeg and salt
- 1/4 cup unsalted butter or margarine, softened
- 1/3 cup dark brown sugar
- 1/2 cup finely chopped walnuts (optional)
- 2 teaspoons ground cinnamon
- 1/4 teaspoon freshly grated nutmeg
- 1 teaspoon salt
- 6 medium dark orange sweet potatoes, peeled and sliced 1/4-inch thick
- 1/3 cup maple syrup
Macaroni Seashell Salad

Cook sea-shells as directed, rinse with cold water, drain and chill

- 1 1/2 cups diced celery
- 1 green pepper, chopped
- 2 Tbsp finely chopped onion
- 2 Tbsp parsley
- 1 1/2 tsp salt
- 1/4 tsp paprika
- 1/4 tsp celery seed
- 2 Tbsp lemon juice
- 2 Tbsp sugar
- 1/2 cups mayo
Chili

Brown ground beef. Add onion and green pepper; cook until almost tender
- 1 lb. ground beef
- 1 large onion, diced
- 1 green pepper, chopped
- 1 can (1 lb.,13 oz)tomatoes
- 1 large bay leave
- 1 - 2 Tbsp. chili powder
- 2 tsp. salt
- 1/8 tsp. cayenne pepper
- 1/8 tsp. paprika
- 1 cn (15 1/2 oz) kidney beans
Caesar Salad Dressing

Shake all ingredients in a jar
- 2 1/2 Tbsp Hellman's mayo
- 2 Tbsp lemon juice
- 1/4 tsp Worceschire sauce
- 1/4 tsp salt
- 2-3 cloves garlic
Turkey Stuffing

Melt butter in skillet. Add onion and celery and cook
- 1 cup butter
- 3/4 cup minced onion
- 12 cups bread cubes
- 1 1/2 cups celery, finely chopped
- 1 Tbsp salt
- 1 tsp pepper
- 1 Tbsp sage, thyme or marjoram*
- Poultry seasoning to taste
- Chopped apples and raisins - optional
