Heat oil in a large pot over medium heat
- 1/2 cup olive oil
- 5 1/2 cups onions, medium dice
- 1 clove of garlic, chopped
- 2 red peppers, seeds removed, medium dice
- 2 medium eggplant, skin on, medium dice
- 2 medium zucchini, medium dice
- 2 yellow squash, medium dice
- 8 Roma tomatoes, coursely chopped
- 1 1/2 Tbsp salt
- 1 tsp fresh ground pepper
- 1 Tbsp chopped thyme
- 2 Tbsp chopped basil
- 2 tsp chopped oregano
Cheese Tortellini Alfredo

In large bowl, combine Alfredo pasta sauce, water, basil and pepper; mix well with a wire whisk
- 1 - 16 oz jar Alfredo pasta sauce
- 1 1/4 cups water
- 1/2 tsp dried basil
- 1/4 tsp pepper
- 2 - 9 oz pkgs refrigerator cheese filled tortellini
- 1 - 14 oz pkg frozen broccoli florets
- 1 cup Parmesan croutons, slightly crushed (otional)
Mushroom Risotto with Caramelized Onions

1. Chop 2 small yellow onions to make 2 cups worth
- 3-4 yellow onions, divided
- 1 tbsp + 3 tbsp extra virgin olive oil, divided
- 3 cloves garlic, finely minced
- 1 pound cremini mushrooms (~455 grams), washed and sliced
- 1 large sprig fresh rosemary
- 1 cup uncooked pot barley (or grain of choice, like rice)* see note
- 1 tablespoon balsamic vinegar
- 3.5 cups vegetable broth (I used full-sodium), *see note
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper, plus more to garnish
- 1 tbsp Earth balance or butter, to stir in (optional)

- 4 boneless, skinless chicken breasts
- 1/2 tsp salt
- 1/4 tsp pepper
- Ritz crackers, crushed
- 1 stick margarine
- 1 finely chopped onion
- 2-3 small cans, mushroom caps
- 1/2 cup chicken broth
- 1/2 cup dry white wine
Chocolate Candy Cane Cake

Preheat oven to 350 F degrees
- 1 pkg. (2-layer) chocolate cake mix
- 1 pkg. (4-serving size) chocolate pudding and pie filling
- 4 eggs
- 1 8 oz. container sour cream
- 1/2 cup vegetable oil
- 1/2 cup water
- 4 squares semi-sweet baking chocolate, chopped
- 18 small candy canes, coarsely crushed, divided
- 1 tub (8oz) Cool Whip whipped topping, thawed
Broccoli Meatballs with Garlic-Tomato Sauce

Meatballs: 1. Preheat oven to 350℉
- Meatballs:
- 4 cups broccoli florets (1 large head)
- 1 cup raw almonds
- 1/4 cup parmesan cheese
- 1/4 cup finely chopped basil
- 1/4 cup finely chopped parsley
- 2 cloves garlic, minced
- 1/8 tsp cayenne pepper
- 2 large eggs
- Garlic-Tomato Sauce:
- 1 Tbp olive oil
- 1/4 cup diced white onion
- 1 large clove garlic, finely chopped
- 1 28-oz can crushed tomatoes
Asian Chicken Salad

Break up ramen noodles and place them and the almonds on a rimmed baking sheet
- 1 - 3 oz pkg Asian flavor ramon noodles
- 1/2 cup sliced almonds
- 3/4 cup bottled red wine vinaigrette dressing
- 1-16 oz pkg coleslaw
- 2 cups shredded, cooked chicken
- 1/2 cup fresh cilantro or parsley
- 2 scallions, both white and light green, chopped to make 1/2 cup
Grilled Beef with Basil Puree Over Tuscan Beans

In food processor, combine the lemon juice, oil, 1 garlic clove, 1/2 tsp salt and 1/4 tsp pepper
- 1 tsp fresh lemon juice
- 1/4 cup extra-virgin olive oil
- 1 1/2 cups loosely packed fresh basil leaves
- 3 garlic cloves
- 1 tsp salt
- 1 tsp freshly ground black pepper
- 1 pound 1 1/2 in thick sirloin steak
- 2 15.5-ounce cans white beans, rinsed and drained
- 1 cup grape tomatoes
- 1 Tbsp finely chopped red onion
Flank Steak Marinade

- 1/4 cup pine nuts

- 1 tsp salt
- chopped flat leaf parsley (for garnish)
