- Jar of caramel sauce
- Chopped peanuts
- Cool Whip

CHOCOLATE MACAROONS

Melt chocolate in large heavy saucepan over low heat
- 1 c (6oz) semisweet chocolate chips
- 1 c flaked coconut
- 1/2 c finely chopped walnuts
- 2 egg whites
- 1/4 t salt
- 1/3 c sugar
ORANGE CHICKEN

Blend four, salt, pepper, paprika, and garlic powder
- 1/2 c flour
- 1/2 t salt
- 1/2 t paprika
- dash of pepper
- dash of garlic powder
- 6 halved chicken breasts
- 6 T olive oil
- 1 lb fresh mushrooms-quartered
- 1 can cream of mushroom soup
- 1 c chicken broth
- 1/2 c orange juice
- 1/2 c dry white wine (optional)
- 1/4 t nutmeg
- 2 t brown sugar
- 2 c diagonal-sliced carrots (1/2 inch thick)
PUMPKIN GOOEY BETTER CAKE

PREHEAT OVEN TO 350 DEGREES
- CAKE:
- 1 PACKAGE YELLOW CAKE MIX
- 1 EGG
- 8 TABLESPOONS BUTTER, MELTED
- FILLING:
- 1 (8-OUNCE) PACKAGE CREAM CHEESE, SOFTENED
- 1 (15-OUNCE) CAN PUMPKIN
- 3 EGGS
- 1 TEASPOON VANILLA
- 8 TABLESPOONS BUTTER, MELTED
- 1 (16-OUNCE) BOX POWDERED SUGAR
- 1 TEASPOON CINNAMON
- 1 TEASPOON NUTMEG
WAKE UP CASSEROLE

1. Preheat oven to 350 degrees
- 8 frozen hash brown patties
- 4 c shredded Cheddar cheese
- 1 # cooked ham, cut into cubes
- 7 eggs
- 1 c milk
- 1/2 t salt
- 1/2 t ground mustard
EGGPLANT SUPPER SOUP

Saute onions in oil and butter, add meat and brown
- 2 T olive oil
- 2 T butter
- 1 med. chopped onion
- 1 lb. ground beef
- 1 med. eggplant diced
- 1 garlic clove mashed
- 1 c. chopped carrots
- 1/2 of diced celery
- 1 lg. can tomatoes
- 2 cans 14oz. beef broth
- salt & pepper
- 1 t. sugar
- 1/2 t. nutmeg
- 1/2 c. salad macaroni
- 2 T. parsley (added the last 10 mins of cooking time)
- Grated parmesan cheese or sour cream to use as topping
ROASTED GREEK-STYLE CHICKEN AND VEGETABLES

- 2 sprays cooking spray
- 5 t extra-virgin olive oil, divided
- 3 garlic cloves, chopped
- 1 1/2 t dried oregano
- 1 T fresh lemon juice
- 2 t lemon zest, divided
- 1/2 t salt, or to taste
- 1/4 t freshly ground pepper, or to taste
- 2 small or 1 large zucchini, sliced 1/4 inch thick
- 2 c grape tomatoes, halved
- 14 oz canned artichoke hearts, without oil, drained well and halved
- 1 # uncooked boneless skinless chicken breasts

ROASTED CAULIFLOWER WITH CAPERS

- 1 T olive oil
- 2 heads cauliflower (2 lbs each), halved and sliced thinly.
- 1/2 t kosher salt
- 1 T drained and rinsed capers, chopped
- 1 T chopped flat-leaf parsley
GARLIC BROWN SUGAR GLAZED SALMON

- 2 2# 2# salmon
- 2 2 2 T olive oil
- 1/4 1/4 1/4 c brown sugar
- 1/4 1/4 1/4 c soy sauce
- 3 3 3 garlic cloves
- juice of one lemon
- 1 1 1 t salt
- 1/2 1/2 1/2 t pepper
- garnish with sliced lemons and chopped parsley if desired
