SLOPPY MAPLE-BBQ TURKEY JOES

In a large skillet, heat the olive oil over medium-high heat
- 1 T extra virgin olive oil
- 1 1/2 pounds ground turkey
- 1 T poultry seasoning
- Salt and pepper
- 1 small red bell pepper, chopped
- 1 small onion, chopped
- 2 cloves garlic, finely chopped
- 1 c tomato sauce
- 1/4 c dark amber pure maple syrup
- 3 T soy sauce
- 2 T cider vinegar
- 2 T brown sugar
- 1 rounded T Dijon mustard
- 8 soft burger rolls, split
- Condiments

- 1/2 c. chopped onion

PORK PAILLARDS WITH SOUR CREAM PAPRIKA SAUCE

Heat oven to 450 degrees. In a medium pot, put tomato soup, water and chicken broth on medium, heat

- 1 – 14 oz. can condensed tomato soup
- 1/4 c water
- 1 – 14 oz. can chicken broth
- 4 large chicken breasts, w/bone and skin for best flavor
- 1 – 12 oz. can pinto or black beans in chili sauce
- 5 corn tortillas
- 2 c shredded cheddar or Jack cheese
- 1 large sweet onion, finely chopped
- 1 large avocado
Beefy Pita Sandwiches

Combine onion, garlic, paprika, hot pepper sauce, and salt in a 12' x 7" microwave-safe baking dish

- 1 large clove garlic, minced
- 1 1/2 t paprika
- 1/2 t hot pepper sauce

- 1/2 # ground beef
- 1 tomato, diced
- 2 T minced parsley

CURRIED CAULIFLOWER SOUP

Combine cauliflower, tomatoes w/juice, broth, onion, and garlic powder to slow cooker
- 1 large cauliflower (separated and chopped)
- 1 (28oz) can diced and peeled tomatoes
- 1 (14oz) can veggie broth
- 1 medium onion chopped
- 1/2 tsp garlic powder
- 2 – 2 1/2 tsp curry powder
- 1/4 tsp ground cumin
- Salt and pepper to taste
CILANTRO CHICKEN

1. Pound the chicken breasts to an even thickness (about 1/2 inch) and place in a shallow baking pan
- 4 boned, skinned chicken breast halves (2# total)
- 1/4 c lime juice
- 1/2 c chopped fresh cilantro
- 6 cloves garlic, chopped
- 1 T honey
- 1 T olive oil
- 1/2 t salt
- 1/4 t pepper
