TORTELLINI TOMATO SPINACH SOUP

- 1 T olive oil
- 1/2 c minced onion
- 1 clove garlic, minced
- 4-6 c chicken or vegetable broth
- 1 (14oz) can whole tomatoes, crushed through your fingers – I used diced tomatoes.
- 1 9oz package fresh tortellini or 4 servings dried tortellini
- Coarse grained salt and cracked pepper
- 10 oz fresh or frozen spinach, defrosted and chopped (I use fresh baby spinach and do not chop.)
- 1/4 c freshly grated Parmesan, very loosely packed
KOHLRABI CURRY

Preheat the oven to 450 degrees
- 1 whole kohlrabi, diced
- 2 t olive oil, divided
- 2 T minced garlic, divided
- 1 c rice
- 1/2 whole onion
- 1 whole tomato
- 1/2 c water, divided
- 1/2 t mustard seeds
- 1/2 t cumin seeds
- 1 T lemon juice
- 1 t curry powder
- 1 t chili powder
- 1/2 t Kosher salt
BAKED HONEY CILANTRO LIME SALMON IN FOIL

1. Preheat oven to 350 degrees
- 1 large salmon fillet
- salt and pepper, to taste
- 1/2 c butter, melted
- juice of 2 limes (plus 1 lime, thinly sliced)
- 4 T honey
- 3 t minced garlic
- 1/3 c cilantro, roughly chopped
TURKEY CORN CHILI

Heat a deep pot over med high heat
- 1 T olive oil
- 1 med onion, shopped
- 1 lg bell pepper – any color
- 1 jalapeno chili – seeded and chopped
- 1 bay leaf
- 1 1/2 # cooked turkey meat, diced
- 1 1/2 to 2 T chili powder
- 1 1/2 - 2 T gr cumin
- 1 to 2 t cayenne pepper sauce
- Salt
- 2 c frozen corn
- 1 (32 oz) chunky style crushed tomatoes
- 2 c prepared chicken stock or broth
- 2 scallions, white and greens, chopped
VEGETABLE SOUP

Place all ingredients in a large pot, and add enough water to cover vegetables
- 5 carrots, chopped
- 3 onions, chopped
- 2 (26oz) cans whole peeled tomatoes, with liquid
- 1 large head cabbage, chopped
- 1 (1oz) envelop Lipton's dry onion soup mix
- 1 (15oz) can cut green beans, drained
- 2 quarts tomato juice
- 2 green bell peppers, diced
- 10 stalks celery, chopped
- 1 (14oz) can Swanson beef broth
BROCCOLI WITH ORANGE SAUCE

Place broccoli and a small amount of water in a saucepan; bring to a boil
- 1 pound fresh or frozen broccoli spears
- 4 1/2 t sugar
- 2 t cornstarch
- 1/2 t chicken bouillon granules
- 1/4 c water
- 1/4 c orange juice
- 1 t grated orange peel
- 1 medium navel orange, thinly sliced
BREAD DIPPIN’ CILANTRO SALSA

. Rinse cilantro; drain, but do not spin dry
- 1 large bunch (about 4 oz) cilantro, tough stems trimmed
- 2 green onions, cut into 2-inch pieces
- 1 T malt vinegar or red wine vinegar
- 1 T fresh lemon juice
- 2 T olive oil
- 1 tsp hot pepper sauce
- 1/4 tsp salt
- 1 loaf French or Italian bread, warmed
CUCUMBER SALAD

Rinse, peel (if desired) and thinly slice 1 English cucumber
- Dressing:
- 1 English Cucumber
- 1 t salt
- 2 T white distilled vinegar
- 1 T Asian sesame oil
- 2 T sugar
- Salt and pepper to taste
COSY CABIN CASSEROLE

Place all items in slow cooker
- 1 # lean beef cubes
- 1 envelope dry beefy-onion soup mix
- 1 can (10oz) cream of mushroom soup
- 1 can (10oz) cream of celery soup
- Optional: Add veggies
QUICK CHICKEN AND BABY BROCCOLI WITH SPICY PEANUT SAUCE

1. Place a rack 4 inches from the heat source; preheat broiler
- 1 T dark brown sugar
- 1/4 c + 2 T peanut butter
- 1 T toasted sesame oil
- 1/4 c soy sauce
- 1 T sriracha sauce
- 1 T rice vinegar
- 1/4 c warm water
- 1 T freshly squeezed lime juice
- 2 bunches broccolini (about 1#)
- 4-6 thin-cut boneless. skinless chicken breasts or cutlets
