Lo Carb Mini Bisquits

- Easy Low Carb Mini Biscuits
- Makes 18 mini biscuits (use mini muffin pan)
- 1 cup + 2 Tbsp. almond flour
- 2 Tbsp. Smart Balance (or butter - either way make sure it's cold)
- 1 tsp. baking powder
- 1/4 tsp. sea salt
- 4 eggs (might work using 3?)
- Preheat oven to 400.
- Spray mini muffin pan w/ nonstick or grease very well.
- Combine the almond flour, salt and baking powder.
- Using a fork, cut the Smart Balance/butter into the almond flour mixture.
- In a seperate bowl, whisk the eggs together.
- Add the whisked eggs to the almond flour mixture. Mix well (but lightly).
- Pour mixture into the greased mini muffin pan (I used 1 Tbsp per vessel).
- Bake at 400 degree oven for 10 minutes.
- ENJOY HOT! These were wonderful w/ a spread of Smart Balance & SF honey!
Low Carb & Gluten Free Eggplant “Fries” ( tried try again in deep fryer))

- Recipe Ingredients:
- Serves 6
- 2 large eggplant
- 2 eggs, beaten
- 1/2 cup coconut flour
- 1/2 cup grated parmesan cheese
- 1/2 teaspoon garlic powder
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 teaspoon parsley flakes
- 1/2 cup olive oil for frying

- 1/2 cup ricotta cheese (stats are for Part-Skim / lowfat)
- 4 eggs
- 1/4 cup flour
- 3 tablespoons milk
- Pinch of salt

Slice the zucchini in half
- zucchini, cut in half
- olive oil
- garlic or garlic powder
- tomatoes
- salt and pepper to taste
- mozzarella cheese or Parmesan cheese
TURKEY CUTLETS PICCATA

Pound each cutlet to 1/8" thickness (or slice to desired thickness)
- I lb. Turkey cutlets
- I large egg
- I tbsp. Milk
- I 1/2 cups fresh breadcrumbs
- Butter or margarine
- I medium sized lemon
- 1 chicken flavored bouillon
- 1/4 tsp. Salt
- Parsley springs for garnish
Cranberry Spinach Salad Recipe

If you want something new to try for your Thanksgiving menu, toss this salad together
- 1 * 1 package (10 ounces) fresh spinach, trimmed
- 3/4 * 3/4 cup dried cranberries
- 2 * 2 green onions, sliced
- 1/4 * 1/4 cup sugar
- 1 * 1 teaspoon dried minced onion
- 3/4 * 3/4 teaspoon poppy seeds
- 1/8 * 1/8 teaspoon paprika
- 2 * 2 tablespoons white wine vinegar
- 2 * 2 tablespoons cider vinegar
- 1/4 * 1/4 cup vegetable oil
- 3/4 * 3/4 cup sliced almonds
Sugar Free Coconut Macaroons

Coconut macaroons are very easy to make
- . 2 cups unsweetened shredded coconut
- . 4 egg whites from large eggs (should be about 1/2 cup)
- . 1 teaspoon vanilla extract
- . 1 cup sugar substitute (I like liquid forms of Splenda, with zero carbs) about 2 Tablespoons water
Sugar Free Candied Nuts with Davinci Syrup

1. Preheat oven to 350F. 2
- 12 oz. Nuts (I use pecans, walnuts and/or almonds)
- 1/2 cup powdered Splenda
- 1/2 cup Davinci Syrup (any flavor is good)
- 1/2 stick unsalted butter, melted
- 1 tsp spice (I use cinnamon) you can use more spices if desired.
- Small bowl
- Medium bowl
- Cookie sheet, lightly greased
Joy Philbin's Sweet Potato and Fresh Orange Casserole

Cover potatoes in water and boil until tender, approximately 25-30 minutes
- 4 Large Sweet Potatoes
- 2 Oranges
- 1 Stick of Butter
- 1 Cup of Light Brown Sugar
- 1/2 Cup of Chopped Pecans
- 1 Tbsp. of Cornstarch
- 1 Cup of Orange Juice
- 3 Tbsp. of Maple Syrup
- 1/8 Tsp. Cloves

- Mix & form into l0 in. pie pan.
