Low Carb Chocolate Coconut Bars

These chocolate coconut bars are an original creation by low carb cookbook author, Jennifer Eloff
- 1/3 cup coconut oil
- 1/4 cup whipping cream
- 2 tbsp Da Vinci® Sugar Free Syrup (I used Macadamia Nut), OR sugar free Pancake syrup
- 1 tbsp butter
- 1 cup chocolate whey protein
- 2/3 cup powdered milk (I used whole milk powder)
- 1/2 cup cocoa
- 1/2 cup powdered erythritol
- 1 cup unsweetened desiccated coconut (divided)
Quick Lemon Icing

Adapted from "Joy of Cooking" We use this for icing Christmas cookies
- 2 cups sifted.confectioners' sugar
- 1/4 cup soft sweet butter
- 1 teaspoon cream, or more if needed
- dash of salt
- finely grated rind of 1 lemon
- juice of l lemon
- Makes 1 cup

- 1 1/2 cups almond meal
- 1 cup whey protein powder
- 1/2 cup (one stick) butter
- 4 oz cream cheese (can use low fat)
- 2 eggs
- 1 1/2 cup sugar substitute (if triple recipe, try 3 teaspoons liquid splenda)
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2/3 cup chopped walnuts
- dried orange or regular cranberries from Trader Joes (if triple recipe use 1 1/2 bags)

- 1/4 cup unsweetened cocoa
- 4 T + 4 T xylitol
- 8 oz cream cheese, softened
- 1 cup shredded unsweetened coconut
- 1 cup coarsely chopped almonds
Honey Garlic Pork Chops - not tested

- 3 tbsp soy sauce
- 6 cloves garlic, minced
- 6 pork loin chops, boneless, trimmed of excess fat, 4 oz each (try to cut in half to make thinner, will absorb more marinade)
Quick Low Carb Shortbread

I like to have a little snack sometimes in the afternoon with a cup of black coffee
- For 16 cookies (8 times recipe):
- 1/4 c almond flour
- 1 tsp melted butter
- dash of salt
- 1 tsp sugar free vanilla syrup ( I used cinnamon vanilla because it was all I had - was good)
- added 2 dried cherries to each cookie
- 2 cups almond flour
- 2 Tblsp + 2 Tsp melted butter
- 1/8 Tsp salt
- 2 Tblsp + 2 Tsp vanilla syrup
CHICKEN POT PIE

Combine first 8 ingredients
- 2 cans (l0 3/4 oz. each) cream of potato soup
- 1/2 cup thinly sliced carrots (cooked)
- 1/2 cup milk
- 1/2 tsp. white pepper
- 1/2 cup cooked baby peas
- 1 cup white com (cooked)
- 1/4 tsp. (ground) thyme
- 2 cups cooked chicken chunks (I used Costco's baked chicken)
- 2 - 9 in. pie crusts
- 1 egg, slightly beaten

- 1/3 * 1/3 cup all-purpose flour
- 1/3 * 1/3 cup grated Parmesan cheese
- 1 * 1 teaspoon paprika
- 3 * 3 large baking potatoes (about 2-3/4 pounds)
- 1/3 * 1/3 cup milk
- 1/4 * 1/4 cup butter, divided
- 2 * 2 cups (16 ounces) sour cream
- 8 * 8 bacon strips, cooked and crumbled

Grilled Salmon With Orange Glaze

Combine marmalade, oil, soy sauce, ginger, garlic and vinegar
- 1/2 cup orange marmalade
- 2 tsps. each sesame oil and soy sauce
- 1/2 tsp. grated fresh ginger root
- 1 garlic clove, crushed
- 3 Tbs.white rice vinegar (or other white vinegar)
- 1 pound boneless, skinless salmon fillet, cut in four pieces
- 6 thinly sliced scallions with some green (optional)
- 1/4 cup toasted sesame seeds (optional)
