Cornbread Dressing

By june
Mix above ingredients together and pour into pan
- Several pans of baked cornbread, crumbled
- 1/2 loaf whole wheat bread, crumbled
- 2 onions, chopped
- 1 apple, chopped
- 2 stalks celery, chopped
- 2-3 tbsp sage
- red pepper flakes
- 2-3 eggs, beaten
- butter, whatever you want
- chicken broth, to moisten
Spicy-Sweet Ham Salad

By june
In a food processor, pulse ham just until finely chopped but not pasty
- 8 About 8 oz cooked cured ham
- 1 cup minced celery
- 1/2 cup mayonnaise, or more to taste
- 2 hard-cooked eggs, finely chopped
- 1/4 cup drained hot pickle relish or finely chopped hot pickles
- 1/4 cup minced sweet onion, such as Vidalia
- 1 tsp yellow mustard, more to taste
- Salt and black pepper to taste
Sesame Chicken With Snow Peas

By june
Whisk 3 tbsp soy sauce, 2 tsp sesame oil and the honey in a bowl
- 5 tbsp low-sodium soy sauce
- 4 tsp toasted sesame oil
- 2 tsp honey
- 1 1/4 lbs skinless, boneless chicken breasts, cut into 3/4-inch chunks
- 6 tsp canola oil
- 2 scallions, thinly sliced
- 1 tbsp grated peeled ginger
- 3 cloves garlic, minced
- 1 1/4 cups low-sodium chicken broth
- 3 tbsp sugar
- 3 to 4 tsp cornstarch
- 1 tbsp rice vinegar
- 1 tsp chili paste
- 4 cups snow peas, trimmed
- Cooked brown rice, for serving (optional)
- 2 tbsp toasted sesame seeds
Bacony Potato Salad

By june
In a large saucepan, combine potato and water to cover
- 12 cups (1-in) cubed baking potato (about 6 large)
- 12 slices bacon, cooked and crumbled
- 1/3 cup chopped green onion
- 1 1/3 cups mayonnaise
- 1/2 cup sour cream
- 1 (1-oz) package ranch dressing mix
- 1/2 tsp salt
- 1 (8-oz) pkg shredded sharp Cheddar cheese
Corn Chowder

By june
In a large stock pot, cook bacon for 5 minutes over medium-high heat until almost crispy
- 4 ozs bacon, sliced into 1-inch pieces
- 2 tbsp unsalted butter or olive oil
- 2 cups chopped onions
- 3 ribs celery, trimmed and chopped (1 cup)
- 2 tbsp all-purpose flour
- 2 cups chicken stock
- 2 cups milk
- 2 large all-purpose potatoes, peeled and diced
- 4 cups frozen corn kernels, thawed
- 2 to 3 tbsp sugar
- 1 cup half-and-half
- salt and pepper to taste
- 1 large red bell pepper, diced
- 3 scallions, trimmed and chopped
- 1 tbsp fresh cilantro, chopped
Jalapeno Popper Dip

- Topping:
- 2 pkgs (16 ozs) cream cheese, at room temperature
- 1 cup mayonnaise
- 8 pieces of bacon, cooked and chopped up
- 6 jalapeños, minced (or 1 (4 oz) can diced jalapeno peppers, drained)
- 2 cloves garlic, minced
- 1/2 tsp cumin
- 1 1/2 cups shredded cheddar cheese
- 1 cup panko breadcrumbs
- 1 cup grated Parmesan cheese
- 4 tbsps unsalted butter, melted
Sweet Potato Cups

By june
Preheat oven to 425 degrees
- 6 small sweet potatoes (about 2 3/4 lbs) or 1 (2-lb 8-oz) can sweet potatoes*
- 4 large navel oranges
- 1 (14-oz) can sweetened condensed milk
- 3 tbsp melted butter
- 2 tsp vanilla extract
- 2 tsp orange zest
- 1/4 tsp salt
- 1/8 tsp ground nutmeg
- 1/8 tsp ground allspice
- 1/8 tsp ground cinnamon
- 1 cup miniature marshmallows
Jerk Seasoning

Combine all ingredients in small bowl
- 1 1/2 tsp salt
- 1 1/2 tsp ground allspice
- 1 tsp sugar
- 1 tsp ground dried thyme
- 1 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp ground red pepper
- 1/4 tsp ground cinnamon
- 1/4 tsp ground nutmeg
Southwestern Cheese-Stuffed Chicken Roll-Ups

Heat oven to 350 degrees. In medium bowl, stir together cream cheese, garlic powder, jalapenos and corn; set aside
- 1 container (8 oz) chives-and-onion cream cheese spread
- 3/4 tsp garlic powder
- 1/3 cup drained pickled jalapeno slices
- 1/2 cup canned whole kernel corn
- 6 taco shells coarsely broken
- 3/4 tsp chili powder
- 4 boneless skinless chicken breasts
- 2 tsp butter, melted
- 1/2 to 3/4 cup buttermilk
- 3 tbsp honey
- 1 cup shredded Mexican cheese blend
- 1 2/3 cups salsa
- 2/3 cup sour cream
