Curried Chicken Salad Spread

Stir together all ingredients
- 2 cups diced cooked chicken
- 2 celery ribs, diced
- 1/2 cup golden raisins, chopped
- 4 green onions, minced
- 1 (8 oz) pkg cream cheese, softened
- 3 tbsp mayonnaise
- 1 tsp curry powder
- 1/2 tsp seasoned salt
Balsamic Vinaigrette

In a medium bowl or food processor, whisk together balsamic vinegar, soy sauce, honey, garlic and red pepper
- 1/2 cup balsamic vinegar
- 1 tbsp soy sauce
- 2 tbsp honey
- 2 cloves garlic, minced
- crushed dried red pepper to taste
- 1/2 cup extra-virgin olive oil
White Peach Crumble
By june
Preheat oven to 350 degrees
- 1/2 cup all-purpose flour
- 2 tbsp firmly packed brown sugar
- 2 tbsp cold unsalted butter, cut into pieces
- 2 tbsp sliced almonds
- 4 white peaches, peeled, pitted, and sliced
- 1/2 cup sugar
- 1/8 tsp salt
- 1 tsp vanilla extract
- 1 tsp orange zest
- Vanilla ice cream
Caramel Apple Cake

Preheat oven to 350 degrees
- For the Cake:
- 2 sticks butter
- 1 cup brown sugar
- 1 cup white sugar
- 3 eggs
- 1 tsp vanilla
- 3 1/2 cups of cake flour
- 2 tsp baking powder
- 1 12 oz can evaporated milk
- 2 tsp apple pie spice
- 2 large apples, peeled and chopped
- 7 oz (1/2 bag) cubed caramels, chopped
- For Icing: (I would double this to make more icing)
- 7 oz (1/2 bag) cubed caramels
- 3 tbsp heavy cream
- 1 stick butter
- 3 cups powdered sugar
Simply Delicious Strawberry Cake

For cake, preheat oven to 350 degrees
- Cake:
- 1 (18.25-oz) box white cake mix
- 1 (3-oz) box strawberry-flavored instant gelatin
- 1 (10-oz) pkg frozen strawberries in syrup, thawed and pureed
- 4 large eggs
- 1/2 cup vegetable oil
- 1/4 cup water
- Strawberry Cream Cheese Frosting (recipe follows)
- Garnish: sliced fresh strawberries
- Strawberry Cream Cheese Frosting:
- (makes about 4 cups)
- 1/4 cup butter, softened
- 1 (8-oz) pkg cream cheese, softened
- 1 (10-oz) pkg frozen strawberries in syrup, thawed and pureed
- 1/2 tsp strawberry extract
- 7 cups confectioners' sugar

- 1 (16 oz) bag pecan halves
- 1/2 cup frozen orange juice concentrate, undiluted
- 1 1/2 cups sugar
- 1/2 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 1/4 tsp salt
Southwestern Pork Tenderloin with Warm Corn Salad
By june
Preheat oven to 475 degrees
- Spice-Rubbed Tenderloins:
- 2 tbsp chili powder
- 1 1/2 tsp ground cumin
- 1 1/2 tsp ground coriander
- Warm Corn Salad:
- 2 tsp olive oil
- 1 small red onion, thinly sliced
- 3 cups fresh corn kernels (from 5 to 6 ears)
- 1 small jalapeño chili, seeded and minced
- 1 medium tomato, finely chopped
- 1/2 cup loosely packed fresh cilantro leaves, chopped
- 1 tbsp fresh lime juice
- 1/2 tsp salt
Turkey Apple Brine
By june
Mix all ingredients, except the ice water, together in large pot and stir well
- 1 gallon ice cold water
- 2 qts apple juice
- 2 qts orange juice
- 2 1/2 cups salt
- 1 cup brown sugar
- 5 whole cloves
- 3 whole cinnamon sticks

In a large bowl, cream butter and sugar until light and fluffy
- Lemon Frosting:
- 3/4 cup butter, softened
- 3 tbsp sugar
- 2 tsp lemon juice
- 1 1/4 cups all-purpose flour
- 1/2 cup cornstarch
- 1 tsp grated lemon peel
- 1/4 cup butter, softened
- 1 cup confectioners' sugar
- 2 tsp lemon juice
- 1 tsp grated lemon peel
- Optional Garnish:
- additional grated lemon peel

- Frosting:
- 2 cups unsifted all-purpose flour

- 1 tsp baking soda
- 1/2 cup buttermilk
- 1 tsp cinnamon

- 1 stick (1/2 cup) butter
- 4 tbsp unsweetened cocoa
- 6 tbsp milk
- 1 tsp vanilla
- 1 (16 oz) box confectioners' sugar
- 1 cup chopped pecans
