Chicken Bruschetta Pasta

Cook chicken in large nonstick skillet on medium heat 5-6 minutes or until done
- 1 lb. boneless skinless chicken breasts, cut into strips
- 1/3 cup chicken broth
- 1/4 t. garlic powder
- 1 tub Philadelphia original cooking creme
- 2 cups grape tomatoes
- 2 cups cooked bow tie pasta
- 12 fresh basil leaves, torn
Chicken & Spinach Pasta Bake

Preheat oven to 400 degrees
- Ingredients:
- Yields 6 - 8 servings.
- 10 ounces dry pasta (I used a combination of rotini, farfalle and penne. Any similar size would work.)
- 2 tablespoons butter
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 4 ounces chive and onion cream cheese
- 1 cup sour cream (or plain Greek yogurt)
- 1 cup whole milk, heavy cream or half-and-half (I used half-and-half)
- 1/2 cup shredded or grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Pinch crushed red pepper flakes (optional)
- 1 - 1 1/2 cups chopped fresh spinach
- 2 cups cooked chicken (cubed or shredded)
- 1/2 cup fresh tomatoes, cut into large chunks (I used grape tomatoes sliced in half)
- Fresh basil or parsley, for garnish

- 3/4 cup breadcrumbs

Southern Macaroni and Cheese!

Boil the macaroni in salted water for the time it says on the box and drain
- 2 cups elbow macaroni or penne
- 1 cup half and half
- 2 cups milk
- 1/2 stick butter plus 1 Tbs.
- 1/4 cup flour
- 8 oz. Velveeta cheese ( you can use American, but nothing beats Velveeta in this)
- 2 eggs, beaten
- 4-6 about 4-6 slices Swiss cheese
- 2 cups cheddar cheese
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. garlic powder
- 1/2 tsp. Tabasco sauce
- 1 tsp. Worcestershire sauce (may sound strange but it adds a hint of flavor)
Baked Buffalo Chicken Dip

- 1 (12.5-ounce) can Tyson chunk white chicken (or about 1 cup cooked, chopped chicken)
- 1 (8-ounce) package cream cheese, softened (reduced-fat is ok)
- 1/4 cup Blue Cheese or Ranch bottled salad dressing, or combination (I used blue cheese)
- Dash garlic salt
- Dash black pepper
- 1/4 cup bottled Frank's RedHot sauce, or to taste
