- 2 medium ripe heirloom tomatoes, cored and cut into bite-size pieces
- 3/4 cup cherry or grape tomatoes, preferably Sungold tomatoes; halved
- 1 cup mixed herbs, such as basil, cilantro and mint, roughly torn
- 1 teaspoon sea salt, plus extra for serving
- 1/2 cup extra-virgin olive oil plus 2 tablespoons
- 2 thick slices Good quality day-old bread
- 1 garlic clove, peeled and halved
- 1/2 ripe Hass avocado, pitted, quartered lengthwise and peeled
- 1 Persian cucumber, peeled and sliced into 1/4-inch rounds
- Freshly ground black pepper
- 2 tablespoons Crème fraîche (or yogurt), optional

1. Preheat oven or toaster oven to 450
- 4 (1-inch thick) crusty bread slices (such as Batard or pain au levain)
- 3 Tbsp plus 1 tsp extra virgin olive oil, divided
- 1 1/2 cups ricotta cheese
- 1 tsp flaky sea salt, divided
- 1/2 tsp black pepper, divided
- 1 garlic clove
- 2 to 3 (about 2 lb. total) heirloom tomatoes, cored and cut into 14 inch slices
- 1 cup loosely packed mixed fresh leafy herbs (such as basil, parsley, chervil, tarragon, anise hyssop or sliced chives)
- 1/2 tsp red wine vinegar
