Anthony's Blueberry Coffee Cake

Ingredients

• 3/4 C melted, cooled butter
• 1 C milk
• 3 eggs
• 1 1/2 C sugar
• 2 t baking powder
• 1/2 t vanilla
• 3 C flour
• 1 3/4 C blueberries, rinsed and dried

Preparation

Step 1

Mix in lrg. bowl-butter, milk, eggs, sugar, baking powder, vanilla and flour. beat until light. Add blueberries and gently stir by hand. Burn into greased 9 X 13" pan. Sprinkle w/topping to follow and bake 350 for 35-40".

Crumb Topping:
1 1/2 C flour
1 C sugar
1/2 t cinnamon
1/2 C + 2 T butter
In med. bowl combine dry ingredients and cut butter into tablespoon size chunks and gradually mix into flour mixture then pour over evenly. Can cut this in 1/2 as it makes LOTS of topping.
