Crustless Quiche

This is a great basic crustless quiche recipe you can add any of your favorite ingredients to, like mushrooms, spinach, or bacon. Omitting the crust in this classic dish makes it a fail-safe low-carb option.

- 1 to 1 1/2 cups of filling
- 8 ounces cheddar cheese, shredded
- 6 eggs
- 1 cup heavy cream
- 1 teaspoon salt
- Dash pepper

Step 1
Spray a 9-inch pie pan.
Prepare the solid ingredients: Sauté and season any raw meats and vegetables. (About 1 to 1½ cups of these work well for one quiche - more if there is no or little cheese.) Add the filling and cheese to the pie pan.
Beat the eggs, then whisk in the cream, salt and pepper. Pour evenly over the cheese. Bake at 350°F for 35 to 45 minutes, until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.
Can be frozen.
