Ingredients
- 1 C skim milk
- 1/2 C uncooked cornmeal
- 2/3 C packed light brown sugar
- 2 tsp. lemon zest, zested
- 1/4 tsp. ground allspice
- 1-1/4 C flour
- 6 C blueberries
- 3 tsp. canola oil
- 1 Tbl. lemon juice
- 1 large egg
- 1-1/2 tsp. baking pwder
- 1/4 tsp. baking soda
- 1/4 tsp. table salt

Step 1
Preheat oven to 350F. Whisk together milk, cornmeal, and 2 Tbl. of brown sugar in a medium bowl. Set aside for a few minutes to allow the cornmeal to soften. In a 2-qt. (13x9-inch), combine zest, allspice, 2 tablespoons of flour and remaining brown sugar, mix in blueberries and level the mixture. Whisk oil, lemon juice and egg into milk mixture. Add baking powder, baking soda, salt and remaining flour; whisk just until combined. Pour batter evenly over blueberries. ake for 40 minutes, or until the fruit is bubbly and a knife inserted into the center of the topping comes out clean. Cut into 12 pieces and serve.
