Cranberry Bread with Cointreau Butter

Ingredients
- BREAD
- 3 c. sifted all purpose flour
- 1.5 c. sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp baking soda
- 2 tbls grated orange rind
- 3 tbls butter, melted
- 2 eggs, well beaten
- 1.5 c. coarsely chopped cranberries
- 1 c. orange juice
- Cointreau Butter
- 2 sticks (1/2 lb) sweet butter, softened
- 1 orange rind, grated
- 5 tbls. Cointreau

Step 1
For the bread:
1) Mix flour, baking powder and soda, salt, sugar and orange rind
2) Add juice, melted butter and eggs. Mix until just combined
3) Fold in the cranberries
4) Spoon batter into two greased 8"x4"x2" loaf pans
5) Bake in 350 degree oven for 30 - 35 minutes or until golden and a cake tester comes out clean
6) Cool in pan for 5 minute then turn out on a wire rack to finish cooling
Butter:
Combine all ingredients until well blended. Place in a serving crock and refrigerate
