Zucchini Quiche

This quiche comes together very simply and is so delicious! Using crescent rolls to make the crust saves time and makes it flaky!

Ingredients
- 4 tablespoons margarine
- 1 cup onions, chopped
- 4 cups zucchini, thinly sliced with skin
- Salt, to taste
- Pepper, to taste
- Granulated garlic, to taste
- Parsley, to taste
- Oregano, to taste
- 2 eggs
- 8 ounces mozzarella cheese, shredded
- 1 package crescent rolls
- 1 tablespoon mustard

Step 1
Melt margarine in saucepan and add onions, zucchini and seasonings. Cook 15 minutes. Remove from heat.
Beat eggs and add to mixture along with shredded cheese. Stir real well.
Separate crescent rolls and press together in ungreased pie plate. Spread mustard on crust and add mixture.
Preheat oven to 375°F. Bake 20 to 30 minutes until crust is brown.
