Chicken with Grilled Veggies and Greek Spices

Ingredients

  • 4 - 3.5 oz Chicken breasts (two whole breast cut in half)
  • 2 Tbls Olive Oil
  • Poultry Magic
  • Grilled Veggies
  • 4 - Sweet Onions quartered
  • 2 - Bell Peppers quartered (red, yellow, green or mixed)
  • 4 - tomatoes quartered
  • 2 - bags of fresh spinach
  • Greek Seasoning
  • Salt and Pepper

Preparation

Step 1

Chicken - preheat skillet with olive oil over medium heat. Pat dry chicken breasts and sprinkle with poultry magic. Sautee chicken for 6 - 7 minutes on each side.

Grilled Veggies - preheat oven to 350. Place Onions and bell peppers in roasting pan, sprinkle with salt and pepper and drizzle with Olive Oil. Bake for 25 minutes. Remove from oven, add tomatoes and spinach and sprinkle with Greek seasonings. Mix well. Place back into the oven for 15 minutes.
