Raisin Bran Muffins

My grandma used to have mix for this ready and would make them every morning when I would visit. Not the most diet friendly muffin but every now and then one must indulge. They're so worth it!

Ingredients

  • 15 ounce box of Kellogg's Raisin Bran (I would imagine you could use generic, but I haven't tried that)
  • 1 cup shortening, melted
  • 3 cups sugar
  • 4 eggs (beaten)
  • 1 quart buttermilk
  • 5 cups flour
  • 5 teaspoons baking soda
  • 2 teaspoons salt

Preparation

Step 1

Mix cereal, flour, soda, salt & sugar in a large bowl.

Mix in remaining ingredients.

Put in muffin pan.

Bake at 350 degrees fahrenheit for 20 minutes.

Batter keeps for 6 weeks in the fridge or can be frozen.
