Ingredients
- four ears of corn
- A pint or two of grape or cherry tomatoes
- 2 cubed avocados
- 5 springs of cilantro
- 2 T. lime zest
- 2 T. lemon zest
- Juice of 1/2 lime
- Juice of 1/2 lemon
- 2 T. olive oil
- Season with flaky salt & fresh pepper

Preparation
Step 1
Grill the corn, cool, and strip the kernels from the cob
halve the tomatoes
Make the vinaigrette with the lime & lemon zest, lime & lemon juice, olive oil, and sprigs of cilantro
Combine the avocado, corn, & tomatoes
Drizzle with the vinaigrette
