Ingredients

  • four ears of corn
  • A pint or two of grape or cherry tomatoes
  • 2 cubed avocados
  • 5 springs of cilantro
  • 2 T. lime zest
  • 2 T. lemon zest
  • Juice of 1/2 lime
  • Juice of 1/2 lemon
  • 2 T. olive oil
  • Season with flaky salt & fresh pepper

Preparation

Step 1

Grill the corn, cool, and strip the kernels from the cob
halve the tomatoes

Make the vinaigrette with the lime & lemon zest, lime & lemon juice, olive oil, and sprigs of cilantro

Combine the avocado, corn, & tomatoes
Drizzle with the vinaigrette
