Taco Stuffed Avocados aka “Avo-Tacos”

Ingredients
- HOMEMADE TACO SEASONING:
- 3 medium ripe avocados
- 2 limes, fresh juice
- 1 pound ground meat, your choice
- 1/2 yellow onion, diced
- 1/2 tablespoon chili powder
- 1/8 teaspoon garlic powder
- 1/8 tsp onion powder
- 1/8 teaspoon crushed red pepper flakes
- 1/8 teaspoon dried oregano
- 1/4 teaspoon paprika
- 1 teaspoon cumin powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- TOPPINGS:
- Tomatoes, diced
- Fresh pico
- Cilantro
- Olives
- Natural cheese (optional)

Preparation
Step 1
Halve avocados, brush with fresh lime juice, sprinkle with sea salt if desired.
Brown meat with the onion in a skillet over medium heat. Once cooked through, drain well.
Add homemade taco seasoning (I add a sprinkle at a time, and taste test until it’s right) and 1 tablespoon hot water.
Simmer for 1-2 minutes until flavors combine.
Scoop hot meat into avocados.
Add toppings to choice, i.e. cheese, salsa/pico, cilantro, fried egg.
