Quinoa with garlic, Pine Nuts and Raisins

Ingredients

  • 1 Cup Quinoa, toasted.
  • 1 3/4 cup Chicken Broth.
  • 1/4 cup toasted Pine nuts.
  • 2 cloves thinly sliced garlic
  • 2 Tbsp. olive oil
  • 1/4 c. Raisins.
  • 1/3 cup chopped fresh parsley.
  • Salt and pepper to taste

Preparation

Step 1

In a med sized saucepan, add toasted Quinoa to chicken broth. Bring to a boil. cover and lower heat. cook for 10 to 12 minutes. Remove from heat and set aside.

Toast the pine nuts, set aside.
Brown garlic in the 2 Tbsp. olive oil.

Fluff Quinoa with a fork, add the pinenuts, garlic, oil, 1/4 c. raisins, and the parsley.

Toss
Corrected seasonings and serve.
