Corned Beef and Cabbage w/Guinness Stout

Ingredients

  • 1 3 or 4 lb Corned beef brisket
  • 1 12 0r 14.9 oz Guinness Stout
  • 1 large onion -- cut in wedges
  • 3 cloves garlic -- minced
  • 1 Bay leaf
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground clove
  • 1/4 teaspoon ground black pepper
  • 1 head cabbage -- cut in wedges

Step 1

Preheat oven to 325. Add oil to large dutch oven over med high heat. Brown brisket on all sides. Pour Guinness over brisket. Add onion, garlic, bay leaf, clove, allspice, pepper. Cover and place in oven for about 2 to 2 1/2 hours. Add cabbage and cook additional 45 to 60 minutes. Remove meat onions and cabbage. place dutch oven on stove and boil liquid to reduce by 1/2. Serve with sliced brisket, cabbage, and onion.
