BANANA-NUT-RAISIN BREAD

Ingredients

  • 1/2 cup butter or margarine, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups mashed ripe bananas
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans
  • 1/2 cup raisins

Step 1

Cream butter; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition. Add bananas, and mix until smooth.

Combine flour, baking powder, soda, and salt; add to creamed mixture, stirring just enough to moisten. Stir in chopped pecans and raisins.

Pour batter into a greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350deg for 1 hour to 1 hour and 10 minutes. Cool in pan 10 minutes. Remove to wire rack to complete cooling. Yield: 1 loaf.
