Ingredients

  • 2 small bunches arugula, cleaned and
  • coarsely chopped.
  • 8 plum tomatoes, coarsely chopped.
  • 8 ounces skinless cooked turkey breast
  • cubed.
  • 5 tablespoons red-wine vinegar.
  • 2 shallots, minced.
  • 4 teaspoons olive oil.
  • 2 small garlic cloves, minced.
  • 1/2 teaspoon freshly ground pepper.
  • 1/2 teaspoon salt.
  • 2 1/2 cups medium-size curly pasta, such
  • as gemelli, fusilli, or radiatore.

Step 1

COMBINE the arugula, tomatoes, turkey, vinegar, shallots, oil, garlic, pepper, and
salt in a large bowl. Cover and let stand
at room temperature.

MEANWHILE, cook the pasta according to package directions. Drain and add to the turkey mixture; toss to coat.
