Ingredients
- 2 small bunches arugula, cleaned and
- coarsely chopped.
- 8 plum tomatoes, coarsely chopped.
- 8 ounces skinless cooked turkey breast
- cubed.
- 5 tablespoons red-wine vinegar.
- 2 shallots, minced.
- 4 teaspoons olive oil.
- 2 small garlic cloves, minced.
- 1/2 teaspoon freshly ground pepper.
- 1/2 teaspoon salt.
- 2 1/2 cups medium-size curly pasta, such
- as gemelli, fusilli, or radiatore.

Preparation
Step 1
COMBINE the arugula, tomatoes, turkey, vinegar, shallots, oil, garlic, pepper, and
salt in a large bowl. Cover and let stand
at room temperature.
MEANWHILE, cook the pasta according to package directions. Drain and add to the turkey mixture; toss to coat.
