Ingredients
- 1/2 stick unsalted butter
- 2 T olive oil
- 2 large diced yellow sweet onions
- 2 Medium Carrot
- Salt
- Freshly ground black pepper
- onion Powder
- garlic Powder
- 1 tablespoon chopped garlic
- 1 1/2 pounds corned beef, cubed small (precooked)
- 1 1/2 pounds yukon gold potatoes, peeled, small diced and blanched (2 Lg Potato)

Step 1
In a large skillet (preferably cast iron), melt 1/4 stick butter and 2 T olive oil, add onions and carrots, season with salt pepper. Saute until soft, add garlic,corned beef and potatoes. Season with salt and pepper. Continue to stir and cook until potatoes are done and everything is browned scraping the pan frequently to get up the browned bits. Season with Onion/garlic powder and check seasoning level by tasting. Add remaining butter and more olive oil as necessary to keep browning potatoes. It's best when everything has a brown crusty edge.
Serve a portion with a fried egg on top
